Peach Cobbler | Dessert Week Day 5

Ingredients

Peach Filling

* 5 fresh peaches, pitted and sliced into thin wedges
* ¼ cup granulated sugar
* ¼ cup brown sugar
* ¼ teaspoon ground cinnamon
* 1 teaspoon fresh lemon juice
* 2 teaspoons cornstarch
* ¼ teaspoon salt

Cobbler Batter

* ½ cup (115 g) unsalted butter, melted
* 1 cup (120 g) all-purpose flour
* ¾ cup granulated sugar
* 2 teaspoons baking powder
* ¼ teaspoon salt
* ¼ teaspoon ground cinnamon
* 1 cup milk

Instructions

1. Preheat your oven to **350°F (175°C).
2. In a saucepan, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, lemon juice, cornstarch, and salt. Cook over medium heat for **5 minutes**, stirring gently until the peaches soften slightly and the mixture thickens.
3. In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Add the milk and mix until you have a smooth batter.
4. Pour the melted butter into a **9-inch baking dish.
5. Carefully pour the batter over the melted butter. Do not stir.
6. Spoon the warm peach filling evenly over the batter. Do not stir.
7. Bake for 15–25 minutes**, or until the cobbler is golden brown and cooked through.
8. For an extra crispy, golden top, broil for 5 minutes, keeping a close eye on it to prevent burning.
9. Let the cobbler cool for 10–15 minutes before serving. Enjoy warm on its own or with a scoop of vanilla ice cream.

🍋 Lemon Curd Cookies | Dessert Week Day 4

Ingredients

- 1½ cups (190 g) all-purpose flour (or gluten-free flour)
- ½ cup (100 g) granulated sugar
- ¼ cup powdered sugar, for rolling
- ½ cup (115 g) unsalted butter, melted
- Zest of 1 large lemon
- 2 tbsp fresh lemon juice
- 1 tsp vanilla essence
- 2 egg yolks
- ½ tsp baking powder
- A pinch of salt

Instructions

1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.

2. Prepare the wet ingredients: In a mixing bowl, rub the lemon zest into the granulated sugar until fragrant. Add the melted butter, lemon juice, vanilla essence, and egg yolks, then whisk until smooth.

3. Add the dry ingredients: Add the flour, baking powder, and salt. Mix until a soft dough forms.

4. Chill the dough: Cover and refrigerate the dough for 30 minutes. This helps the cookies hold their shape while baking.

5. Shape the cookies: Scoop about 1 tablespoon of dough and roll it into a ball. Coat each ball generously in powdered sugar and place it on the prepared baking tray, leaving space between each cookie.

6. Bake: Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft.

7. Cool and serve: Let the cookies cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
