Do you cook at home? Are you a professional cook or chef? If so, you need to attend the NSW Cutlers Expo 29th/30th August 2026, to check out and purchase a artisan handmade tool that will outperform most of the factory ones with ease, while also getting a family heirloom piece that will last for decades and be handed down for generations.

TRY THE PRODUCT in hand to feel the weight and that the handle shape is suited to you, we aren’t all built the same, so handles are different.

With all your favourite profiles in abundance to choose from, including the common Japanese styles of Gyuto, Santoku, Bunka, Nakiri, Petty to the more specialised Usuba, Yanagiba and Deba, right through to the western equivalents of chef, utility, carving, boning, fillet and paring pieces, or even a large bone crushing cleaver, there is a style for your type of preparation.

Using tried and tested high carbon steels or the new age high performance stainless steels; creating eye catching hamons, damascus, San-Mai, Cu-Mai or mono steel blades, then combined with exquisite figured hardwood, synthetic, Micarta, horn, antler, carbon fibre, acrylic, resin, Juma, etc... handles, the variety and combinations are endless.

All of the above, PLUS MORE, are available at Australia’s, and arguably Asia-Pacific’s, largest annual exhibition of the best Australian and NZ Artisan Cutlers and bladesmiths, as well as pieces from some of Japan’s best makers.

Early bird tickets are on sale and selling fast, secure yours now, link in Bio….

Forging today. Turning rectangular bits of steel into slightly more knife shaped bits of steel. A really satisfying and rewarding part of the whole making process.

I have a new kiln. Well it’s second hand but new to me. On the left is my old one. Does a great job. So why get a new one ?
Well the new one on the right is just that little bit better. It has 3 thermocouples (thermometers) and more heating elements distributed more widely through the interior so it is a more even ,more accurate heat. This means better control of heat treatment and a better knife.
So while it was expensive (even second hand) and I didn’t absolutely need it, and while it will only make a very slight improvement I am glad to have it. Those little differences all add up to make a better product
