There’s something magical about the simplicity of tomato soup and grilled cheese. It’s more than just a meal; it’s a childhood memory wrapped in warmth. This recipe for tomato soup, made with fragrant garlic, sweet tomatoes, and a touch of basil, brings a fresh, rich flavor in just 20 minutes. Whether you choose to swirl in a bit of cream or leave it as is, every spoonful feels like a hug in a bowl. Pair it with a crispy, golden grilled cheese, and it’s like revisiting those cozy afternoons spent at Grandma’s kitchen table.
When I was eight, I spent a rainy afternoon with my grandmother. The weather had cancelled our plans, and I was sulking by the window, watching the raindrops race down the glass. Grandma, noticing my pout, quietly slipped into the kitchen. Soon, the smell of onions and garlic filled the house, mingling with the sound of the rain. She handed me a bowl of steaming tomato soup and a perfectly toasted grilled cheese, cut into neat triangles.

Ingredients:
2 tbsp olive oil or butter
1 onion, chopped
2 cloves garlic, minced
1 can (28 oz) crushed tomatoes
2 cups vegetable or chicken broth
1 tbsp tomato paste
1 tsp sugar (optional, to balance acidity)
1 tsp dried basil (or 1 tbsp fresh basil)
1/2 cup heavy cream (optional, for creaminess)
Salt and pepper to taste
Fresh basil leaves (optional, for garnish)
Instructions:
Sauté the onions and garlic:
Heat olive oil or butter in a large pot over medium heat. Add chopped onions and sauté for about 5 minutes, until soft and translucent. Add minced garlic and cook for another minute until fragrant.
Add the tomatoes: Pour in the crushed tomatoes, vegetable or chicken broth, and tomato paste. Stir well to combine.
Season and simmer: Add dried basil, sugar (if using), and salt and pepper to taste. Bring the soup to a gentle simmer and cook for 15 minutes to allow the flavors to meld together.
Blend (optional): For a smoother texture, use an immersion blender to puree the soup directly in the pot, or carefully transfer it to a blender and blend until smooth. If you prefer a chunkier texture, skip this step.
Add cream (optional): Stir in the heavy cream for extra richness and let the soup simmer for another 2-3 minutes.
Serve: Ladle the soup into bowls and garnish with fresh basil leaves if desired.
