Hi ,to my friends in the kitchen , it's Iva!
Over the weekend, the weather was absolutely beautiful and sunny, I spent the day at the beach with my dad—it was amazing! But back home in the Blue Mountains, the cold has definitely settled in. We’ve got the fireplace going, and I thought, what better way to warm our bellies than with a comforting Croatian goulash with ricotta gnocchi
Here’s what you’ll need to make these delicious dishes:
Croatian Goulash
Ingredients:
• 800g beef chuck (cut into chunks)
• 2 onions (finely chopped)
• 3 cloves garlic (minced)
• 2 tbsp olive oil
• 2 tbsp sweet paprika
• 2 tbsp tomato paste
• 1 red capsicum (sliced)
• 500ml beef stock
• 250ml red wine (optional, but recommended!)
• 2 bay leaves
• Salt & pepper (to taste)
• Fresh parsley (for garnish)
Ricotta Gnocchi
Ingredients:
• 250g ricotta cheese
• 1 egg
• ½ cup grated Parmesan cheese
• 1 cup plain flour (plus extra for dusting)
• ½ tsp salt
Drain ricotta and press with paper towel mix all ingredients folding into mixture once all combined roll into 20cm logs about thumb width and cut 1.5cm for bite size pieces,
Cook gnocchi in boiling water ,
Gnocchi will be cooked when they float to the top , best served hot
The combination of rich, hearty goulash and soft, pillowy gnocchi is just so yum on a chilly night.
Let me know if you give it a try! Enjoy and stay warm!

Hi to my friends I’m the kitchen,
It’s Iva.
Today I have made Croatian Kremšnite (Vanilla, custard and cream slice).
Please enjoy. It’s so yum.

Ingredients:

500 gram puff pastry sheets (we bought them, but you can make them fresh if you have time)
485 ml fresh milk
50 gram all-purpose flour
2 eggs + 2 egg yolks
100 gram white sugar
30 gram vanilla sugar
10 ml of rum
395 ml whipping cream
Icing sugar

Method:
Preheat the oven to 200 degrees
Place the puff pastry on a baking tray lined with parchment paper and prick with a fork a few times and bake for 10 minutes
Use a blender to mix eggs, yolks, flour, 250 ml of milk, 70 gr sugar, and 15 gr of vanilla sugar, and set aside
Into a saucepan, pour 235 ml milk, 15 gr vanilla sugar, and rum and heat until boiling. Add the above mixture, stir and then cook over medium heat for about 15 minutes, constantly stirringly until the mixture is thick as a pudding - make sure it doesn't burn
Place the first slice of puff pastry in a serving dish (we used one 25x25cm) and pour in the hot mixture. Refrigerate for 15 minutes
Add 30 grams of sugar to the cream and whip till light and fluffy
Remove the dish from the fridge and arrange a thin layer of whipped cream on top of the cream
Place the second baked puff pastry on top and sprinkle with icing sugar to taste
Cut the kremsnite into your desired-sized slices.

Just want to say a big thank you to everyone for your support regarding my cookbook! Won’t be long.
