🌿✨ Quick, Delicious & On the Go! ✨🍄

Busy day ahead? No problem! This is an oldie but a goodie!

I whipped up a creamy Mushroom Risotto in my Thermomix this morning, and it’s the perfect grab-and-go meal for work today. 👩‍🍳💼

Ready in under 30 minutes, no standing over the stove, and packed with rich, earthy mushroom flavor — it’s comfort food made easy. I just portioned it into a container, and lunch is sorted. 🙌

I added some garlic and a handful of baby spinach.

I even had time for other chores such as feeding the chickens, collecting the eggs and checking on our growing silver perch while it was cooking.

Tonight’s special: Thermomix Nasi Kampung served with a side of my dad’s legendary butcher sausages — because nothing says “easy dinner win” like traditional flavours paired with premium protein and zero stress. 🙌 and this week, there's been plenty of stress! Saturday dinner done right. 🤛

🚨 DESSERT ALERT: My Thermomix just unlocked LEVEL 100 GRANDMA MODE 🍰✨

You guys… I made Sticky Date Pudding in the TM7 and I think I accidentally summoned a sugar fairy. This thing is so good it could negotiate world peace… 🙃

The dates? Steamy and smooth.
The sauce? Buttery, rich, and probably illegal in several countries.
The cleanup? Basically nonexistent (bless you, Thermie). 🙏

I served it with a scoop of vanilla ice cream or Cream and a warning: “Do not operate heavy machinery after consuming.” 😴💤

What can I say? This soup is the go-to when comfort calls and time is not on your side. Rich, creamy, and packed with earthy mushroom flavour, it’s basically a warm hug… that you can eat. 🫶

✨ Ready in just 20 minutes (yes, even if you’re pretending to be busy), it’s the ideal meal to whip up fresh and take to work for lunches or cozy dinners. Because who said weekday meals have to be boring?
Makes enough to feed 4 so a little snacky snack will be waiting for me when I get home in the cold later tonight.😁

🥶🌧️ It’s cold, it’s stormy, and honestly… it’s the perfect night for a good ol’ curry!

Tonight’s winner? 👉 Creamy Beef Curry – rich, hearty, and packed with flavour. Now, I usually stick to 40-minute wonders, but this one takes about 1 hour 15 mins… and trust me, it’s worth every second. No fuss either – just throw everything in the bowl and let it do its magic. ✨🍛

Here’s a little trick we swear by: when we buy bulk meat, we dice, weigh, and bag it in cryo packs for the freezer. Takes about an hour every few months, and it saves so much time later. Tonight’s beef? Already portioned, thawed, and dumped. Easy peasy!

Served it up with fluffy basmati rice and warm naan bread – it’s a full belly, warm soul kind of night. ❤️

Friday Night = Pizza Night
Because this week was longer than a group text with 17 people who don’t mute their notifications. 🙄
So what’s on the menu? Pizza. Glorious, homemade, doughy goodness. Why?
Because it’s simple, it’s yum, and honestly—it’s the least drama I’ve had all week. 🙃

Step one: Chuck everything in the Thermomix. No finesse required, just a “yeet and retreat” situation. It even cleans itself, darling. I wish my kids came with that feature.

Then we use our bougie bush-life setup and let the dough rise like it’s levelling up in life, thanks to our wood fire’s leftover heat. Rustic and practical? We love to see it.

I made a big batch—because hello, hungry humans. And did you know Cookidoo adjusts recipes based on how many mouths you’re feeding? That’s the kind of math I actually respect.

Then it’s just some fresh garden goodies, a few fancy toppings, and boom—gourmet pizza that could make an Italian nonna weep (in a good way). 🇮🇹🍅

We’ve got an Ovana pizza oven from Thermomix, a.k.a. our best bushland investment since buying gumboots that don’t leak.

Yes, some pizza bits went missing—BOYS! (If you know, you know. 😤)

Nachos with Chilli & Cheese: The Sunday Night Saviour

Who says comfort food can’t be classy? Enter: a one-pan wonder—Chilli Cheese Nachos. Super satisfying, gloriously gooey, and ready in under 30 minutes. It’s the kind of dish that makes you feel like you’ve got your life together, even if your Monday planner says otherwise.

We doubled the mince and ditched the red kidney beans (controversial, we know—but necessary). The result? A heartier, meatier base that hits all the right notes.

As for the finishing touches? We don’t bother with the oven—who has time for that on a Sunday night? A minute in the microwave is all it takes to melt the cheese into molten perfection.

And instead of sour cream, we dollop on Greek yogurt. It’s tangier, lighter, and just a touch more virtuous—because balance, right?

Smoko Sorted — Kitchen Reno Style

The snacks are on the go this week, even if the kitchen isn’t quite there yet! While I’m still (impatiently) waiting for the new kitchen to be installed, it has arrived — and I couldn’t be more excited. My lovely husband was swiftly convinced to build the pantry first (brilliant move, if I may say so), and I’m absolutely wrapped with it!

I can already picture it: gleaming jarrah floors freshly sanded and sealed, sleek new cabinets, shining benchtops, and that big beautiful sink. The kitchen of dreams is slowly coming to life — but in the meantime, I’m sticking to simple, homemade snacks to keep work lunches both delicious and budget-friendly. Let’s face it, kitchens don’t come cheap!

Today’s creation? Classic Aussie Vegemite and cheese scrolls — fluffy, golden and oh-so-good.
Here’s the cost breakdown:
• Dough ingredients: approx. $1.50
• Cheese: approx. $1.80
• Vegemite: approx. $1.00

All up, that’s $4.30 for a whole batch. Compare that to your average bakery scroll (basically a small mortgage per bite), and I’d say we’re winning — not just in price, but in taste. Light, fluffy dough vs. dense, chewy shop versions? No contest.

Hot tip: Take the time to let your dough proof properly — it makes all the difference. We place ours near the wood fire (thank you, winter), and the rise is just beautiful. Once you’ve cut your scrolls, pop them in your baking tin, cover them, and let them rise again. Trust me, your future self — and your taste buds — will thank you.
