Tonic battered rockling fillets and herbed chips.

All together say hallo summer.
The weather today was just brilliant perhaps a taste of what's to come ( no pun intended).

Here's to twice cooked super crispy rockling fillets and rosemary chips with a homemade natural yoghurt dip ( cucumber, garlic, lemon zest parsley).

Bliss in the sun.

My rule of thumb is that I don't adulterate traditional/original recipes, but when you've had a week like mine that rule was out the window.
I had Vietnamese phò soup (no broth), 2 min noodles, bok choy, fresh coriander, fresh parsley (yes what a game changer) prawns, dried chilli flakes.

Thanksgiving.

Many focus on the perfect traditional feast and quite often by the time they're done with that there's little energy left to tie everything together.

Here are my top 5 no fuss Thanksgiving sides ready in less than 15 mins!!!

1️⃣Humble savoy cabbage topped with spicy panko
2️⃣Smokey corn and charred chillies
3️⃣Mint sour cream and potato salad
4️⃣Sugar snaps, mint and spinach
5️⃣Grilled eggplant with homemade ras el hanout ricotta.

Facebook has duly reminded that today, 12th Nov 2021 marks 12 months since I published 'on my KENYAN plate'.
Since then alot has happened. The book is:

Archived in the National Library of Australia- a piece of Kenya will forever be accessible for generations to come.

Part of local library collections in NSW, VIC, QLD and WA- people around the country don't need to wait to visit the archives to learn about Kenyan food and its history.

Part of school libraries in NSW and VIC-this cultural background gives children context of the customs, beliefs and attitudes of the Kenyan people and how food has shaped who they are.

In people's homes. Thank you all that rushed out to get themselves copies.

I hope that through this book you stand tall and empowered to share a piece of your Kenyan heritage.

Rich, creamy and aromatic fenugreek chicken curry.

An old fashioned chicken curry is made royal with this earthy fenugreek.

Ever since my friend Aunt Tabby introduced me to fenugreek also known as kasuri methi, I have never looked back!! But don't take my word for it, give it a go.

Beef

I often hear I don't like beef. And my first question is how did you make it?
In October I did an edition with various cuts of beef to inspire you to do various things in your kitchen.

This collage is my ' How to cook that' rendition.

Stay tuned for more exciting stuff in November.
