Third year running, Bathers Pavilion asked GRIT back for their annual residency.

The concept stays the same every year. A guest chef (from the best rated restaurant in the world) comes in and travels across the oceans with their own A-team. The whole venue gets rebuilt around them, and they set the standard. This year that was Kyle Connaughton and his wife Katina - the brief was to reinterpret the plates Single Thread runs at their venues in Cali & Japan. Not copy them. Make the gritty version.

Five designs. Techniques I don’t normally reach for, 3D modelling, methods further from the wheel than I’m used to. Months of glaze testing. Firing and drying fails that sent me back to the start more than once. Not to mention working double time when my partner in crime had an extended hospital stay and major lung operation. Life gives us these challenges at what always seems like the most critical, pressure filled times!

You open the kiln, it’s all wrong, despite doing everything right, and you must just simply decide to start again anyway. No time to wallow - the team is en route, they can’t serve food without the plates, the show must go on. That’s the whole gritty gig. Chefs know the same level of deeply dug perseverance, one service goes bad (because we are all just human) but you choose to come back the next night and give it everything you’ve got, regardless.

Aaron Ward is a pleasure to work with - he held the standard high the whole way and still gave the license to make the designs our own. Four potters came together on one table, four different sets of hands, and it reads as one room. and

And behind all of it, my mentor Malcolm Greenwood who taught me the discipline and skills required to make a career out of tableware (and made the bulk of Bathers’ daily service plates).
Nothing I do happens without what he handed down and the tough love that pushes me to grow, make & deliver the best I can.

High expectations, VIP service, no margin for mediocre.
Proven on the pass.

Half my life here, half my life there.
home is where the GRIT is 🇺🇸+🇦🇺

Its not easy being an American immigrant right now, when the whole world throws so much hate at my first home.

In all the animosity, it is a daily choice to block out the negativity and the noise - to simply be grateful to carry the American spirit I was born with into the gritty life I've built here in Australia.

Different soil, same fire.

The discipline, the resilience, the refusal to give up.
Some things you just don't leave behind.

Every gritty piece that comes out of this studio carries that same strong work ethic.

Nothing I make or share is flashy.
I try to let my story reflect the discipline I was taught,
to show up and stay gritty, day after day.

It's also why I choose to work with the best chefs in the world.
Aligned in creativity, driven by the same hard work obsession.
We are living a life of service to others.

Just infusing that good natured, hard working Aussie-merican spirit into everything we do, on repeat.

sanding the bottoms of every single piece of GRIT is a non negotiable.

I care deeply about the surface of your tables AND never want to be responsible for your service team saying the rough texture feels like “fingernails on a chalkboard” when they handle the plates.

Hot tip - it you make tableware, don’t skip this step. ✌🏽
