San Choy Bau 🥬

Simple and delicious hubby said it was too messy to take leftovers to work for lunch so we got to enjoy even more 🤤

Really yummy with lots of flavours & textures and best of all blooming easy to do. The pork needs to be partially frozen to mince which was just as well as I had forgotten to take it out the freezer 😆

Creamy Broccoli Soup With Crispy Quinoa 🥄

Well this was blooming delicious 😋 and a perfect meal made out of some leftover vegetables

Makes a large batch so perfect for larger families, hosting or just to have some in the freezer for a back up meal. For me this will make for easy lunches this week

Chicken Meatballs In A Smoky Tomato & Eggplant Sauce

This dish had quite a few steps to it so wasn’t a usual quick go to for a week night dinner but time allowed for this today

I had extra of the meatball mixture so popped some of that in the freezer to use for meatballs or burgers to give be a super quick meal another night

Each of the components of this dish were good but when it’s all put together it’s very tasty. The whipped feta finishes it off nicely 🍽️

My new FAVOURITE salad in the Thermomix®

I didn’t have speck but made this on the back of slow cooking corned beef so used that instead

Will definitely make this again and will likely try with some goats cheese next time
