πΏ ZESTY LEMON-HERB QUINOA BOWL
Perfect as a base for your Mediterranean bowls or as a standalone dish!
π INGREDIENTS:
For the Quinoa:
β’ 1 cup quinoa, rinsed well
β’ 2 cups vegetable or chicken broth
β’ 2 tablespoons olive oil
β’ Zest of 1 large lemon
β’ 3 tablespoons fresh lemon juice
β’ 3 cloves garlic, minced
Fresh Herb Mix:
β’ 1/4 cup fresh parsley, finely chopped
β’ 2 tablespoons fresh dill, chopped
β’ 2 tablespoons fresh mint, chopped
β’ 2 green onions, thinly sliced
β’ Salt and freshly cracked pepper to taste
Optional Add-ins:
β’ 1/4 cup toasted pine nuts
β’ Crumbled feta cheese
β’ Cherry tomatoes, halved
β’ Cucumber, diced
π©βπ³ INSTRUCTIONS:
1. Rinse & Prep:
- Rinse quinoa in a fine-mesh strainer until water runs clear
- Zest and juice your lemon
- Chop all herbs finely
2. Cook the Quinoa:
- Bring broth to a boil in a medium saucepan
- Add quinoa, reduce heat to low
- Cover and simmer for 15-18 minutes
- Remove from heat, let stand covered for 5 minutes
- Fluff with a fork
3. Make it Zesty:
- While still warm, fold in olive oil
- Add lemon zest and juice
- Stir in minced garlic
- Season with salt and pepper
4. Final Touch:
- Fold in all fresh herbs
- Add green onions
- Adjust seasoning to taste
- Optional: top with pine nuts and feta

- Toast quinoa briefly before adding liquid for nuttier flavor
- Always rinse quinoa to remove bitterness
- Use warm (not hot) quinoa to preserve herb freshness
