A couple of weeks ago, I put my TM7 in the pantry to free up a bit of bench space.

I have also been making a concerted effort to eat leftovers out of the freezer, instead of continually adding to it 🤪

But foolishly, I went to ALDI the other day and bought - among other things - two packets of wagyu meatballs and two packets of pork and beef meatballs. Yes, I can - and usually do - make my own meatballs but hey, when in Rome.

I oven baked the meatballs and brought my Thermomix out of the pantry. In exactly 30 seconds, I had onion, garlic, carrot, red capsicum, zucchini, celery and fresh tomatoes blitzed to form the base of my tomato sauce for the meatballs. I added Nikalene’s chicken stock concentrate, tomato paste, gochujang (don’t knock it til you’ve tried it, it adds a beautiful little bit of heat, just don’t overdo it!!), passata, brown sugar, black pepper, porcini salt, Italian herbs, two portions of vegetable booster and when it has cooked down a bit, I will also add cream.

An incredibly simple and cost effective meal, which will also give us lunches for the next few days 😋

While it seems an expensive outlay initially, buying large bottles of white spirits and steeping vanilla beans to make vanilla extract works out a lot cheaper than buying small bottles from the shop, especially as I buy the alcohol when it’s on special.

I keep mine in the pantry for a good two to three months, gently turning the bottle upside down every so often. When it smells like vanilla and no longer like alcohol, you’re good to go!

As I use the extract, I keep the beans in so they continue to infuse and when I have about a third of the bottle left, I start a new batch.

When I finish the extract, I use Nikalene Riddle’s premium vanilla bean syrup recipe. I figure the beans will have been diluted in the alcohol, so I just use whatever I have had in the extract (usually 10-12) and triple the rest of the ingredients. I cook for longer too, as I like my syrup a bit thicker.

I then dehydrate the beans, before blitzing them to make vanilla powder. It’s like the gift that keeps on giving and I can’t remember the last time I have had to buy vanilla extract or vanilla bean syrup from the shop. Years.

And I tend to buy my vanilla beans online, I don’t have a favourite stockist or type of bean, I just keep an eye out for what’s on special 😉 I am a sucker for specials, can you tell?

I am now the proud owner of just over 500mL vanilla bean syrup and a litre of vanilla extract. Let me know if you try this and how you go, and if you already follow this method, tell me how much you love it!

I had a bag of frozen raw rhubarb and some granny smith apples, so stewed the fruit on the stovetop while making the crumble topping manually and the vanilla bean custard in the thermomix. We were a bit naughty and put some dollop cream on top 🙊🤤

Made Aussie Thermomixers - Tanya Halse Thermomix Consultant’s incredible tom kha g*i today for the first time. It made heaps (I did use more chicken, because it needed to be used) and also added red capsicum and baby corn. Finished off with udon noodles (not Thai, I know!), Thai basil and coriander - I sent a container home with two of my sisters and still have two containers left.

My brunch today 🤤🤤🤤

We got back from our first overseas holiday since before covid Monday night and what an absolute treat! Vietnam and Cambodia, you have my heart 🩷

Yesterday morning, I took an unknown and unmarked container out of my freezer. Are you one of those, ‘I don’t need to label this, I’ll remember what it is’ type people, only to in fact have nfi what it is? 🤣

I cooked some brown rice, steamed some broccolini and as I reheated the contents of said container, it became pretty clear to me what it was.

The Easy Chinese Beef and Tomato recipe from Cookidoo. I cannot rave highly enough about this meal. I stirred a portion of Nikalene Riddle’s vegetable booster through it, a grind of Cambodian Kampot pepper on top and clean plates all round!! 😋

Sunday afternoons I usually prep a bit of food for the start of the week and homemade sausage rolls are a firm favourite here at the moment.

What to put in them to make them a little healthier? Well, the answer today is zucchini, carrot and apple, blitzed 5 seconds | speed 5, then put in a mesh sieve to drain the excess liquid. I got a full 250mL and drank it - it was delicious!! Then a sweet potato, 5 seconds | speed 5, then cheddar cheese, 5 seconds | speed 6. I also threw in some fennel seeds. 15 seconds and the veggies and cheese were all done!

Mr Richards mixed it all in with diced bacon, pork mince and sausage meat. We’ll see what the verdict is, but I feel they will be delicious!!
