My brunch today 🤤🤤🤤

Seeded toast, Tassal smoked salmon, a perfectly poached Levi’s egg, gochujang chilli hollandaise and avocado with hand cut chips leftover from last night’s dinner. I am so full!!!

We got back from our first overseas holiday since before covid Monday night and what an absolute treat! Vietnam and Cambodia, you have my heart 🩷

Yesterday morning, I took an unknown and unmarked container out of my freezer. Are you one of those, ā€˜I don’t need to label this, I’ll remember what it is’ type people, only to in fact have nfi what it is? 🤣

I cooked some brown rice, steamed some broccolini and as I reheated the contents of said container, it became pretty clear to me what it was.

The Easy Chinese Beef and Tomato recipe from Cookidoo. I cannot rave highly enough about this meal. I stirred a portion of Nikalene Riddle’s vegetable booster through it, a grind of Cambodian Kampot pepper on top and clean plates all round!! šŸ˜‹

Sunday afternoons I usually prep a bit of food for the start of the week and homemade sausage rolls are a firm favourite here at the moment.

What to put in them to make them a little healthier? Well, the answer today is zucchini, carrot and apple, blitzed 5 seconds | speed 5, then put in a mesh sieve to drain the excess liquid. I got a full 250mL and drank it - it was delicious!! Then a sweet potato, 5 seconds | speed 5, then cheddar cheese, 5 seconds | speed 6. I also threw in some fennel seeds. 15 seconds and the veggies and cheese were all done!

Mr Richards mixed it all in with diced bacon, pork mince and sausage meat. We’ll see what the verdict is, but I feel they will be delicious!!

I am a sucker for sweet & sour pork, so jumped onto testing this gem of a recipe out!!

I bought a Linley Valley b***d and rolled pork shoulder from my local Farmer Jack’s for $8.50/kg (I have since bought a larger shoulder for $6.99/kg and it’s in my fridge to revisit later this week, but I am unsure whether the special is still running), making this a fantastic budget dinner!

When I threw my ginger coins from the freezer into the jug, there were a couple of small coins of frozen fresh turmeric attached, so I just left them, hence the colour of the sauce.

This recipe is so delicious. Double it for leftovers to go in the freezer and future you will thank you. And if you have good intentions in your vegetable crisper drawer, chuck them in - the more, the merrier!

I have been lucky enough to be a recipe tester for Nikalene Riddle’s Skinnymixers for many years now and she is not far off releasing her next sensational cook book, Dinners 4.

This incredibly easy recipe is the Creamy Chicken, Bacon and Broccoli pasta. I added a couple of good handfuls of chopped baby spinach to my thermoserver before adding the pasta a) because I had a bag of good intentions that needed to be used and b) because I really do need to eat more vegetables.

Using every day ingredients, this is a very quick weeknight recipe to whip up - my kids LOVED it, this one is guaranteed to be a favourite!

Friends. Long post incoming.

When the world feels heavy and uncertain, when it’s really difficult to tell at times what is real and what is AI generated, who’s truth telling and who is spewing vitriol just to look like a hero, one thing rings true for me.

Making delicious food for those I love.

I offered this rose gold roaster to my sister today and she said no.

Shame.

The lamb has Jack of All Lamb seasoning on it and the vegetables are coated in olive oil and Roast Vegetable Rub, both Nikalene’s delicious recipes.

Most of it is in the oven now, making my house smell absolutely incredible, except the quick cook vegetables which will go in shortly, and some broccoli, which I’ll steam.

The Coles white mud cake in the background? To highlight that we don’t need to make every damned thing from scratch. That the occasional treat with numbers or ingredients we can’t pronounce is okay. As my Manager said to me recently, we can do anything, but we cannot do everything. Amen.

So I hope you’re all okay, I hope you’re taking moments of quiet when you can to breathe and know we’re all in this sh*tshow together, to take care of yourself and to be kind ###

About seven months ago, I joined Thermomix as a consultant and today have made the decision to hang up the chambray apron. As I disassembled my kit just now, I felt gratitude but also a small sense of relief - gratitude for the friendships I have formed and the support I have received, but relief because life is soooooo busy with a Mon-Fri 9-5 (which can sometimes look more like a 7-5) and while I have LOVED the busyness of the last seven months, for me it isn’t sustainable long term. And I needed to make the call earlier rather than later because support is such a big part of the Thermomix business and I didn’t want to feel stretched so thin that I could no longer provide that quality support.

So to those of you who invited me into your homes, held demos for me to practice, shared šŸ„‚ and laughs, taught ME things and purchased a machine, from the bottom of my heart, I am grateful to each and every one of you. And of course I am absolutely happy for you to still reach out if you have questions, I just won’t have access to consultant information anymore.

It would be remiss of me not to mention a few extra special people - the best Team Leader Angie Fortuna, my favourite consultant Aussie Thermomixers - Tanya Halse Thermomix Consultant (my consultant before I started and who I recommend if you need anything moving forward) and my main wing girl Hels Bels 🩷🩷🩷
