No-Bake Coconut Cream Balls 🥥🍫

Ingredients:

2 1/2 cups sweetened shredded coconut
1 cup powdered sugar
1/4 cup unsalted butter, softened
4 oz cream cheese, softened
1 tsp vanilla extract
1 cup white chocolate, melted (optional, for coating)

Directions:

In a medium bowl, beat together the butter, cream cheese, and vanilla extract until smooth. Gradually add powdered sugar and mix until fully incorporated.
Stir in shredded coconut until a sticky dough forms.
Using your hands or a small cookie scoop, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
Chill the coconut balls in the refrigerator for at least 1 hour to firm up.
(Optional) Dip each ball into melted white chocolate, letting the excess drip off. Place back on the parchment-lined sheet and refrigerate until the chocolate is set.
Serve chilled and store in the refrigerator for up to 1 week.

Tips:
Add a few drops of almond extract for a flavor twist.
