This is a dish I’ve always wanted to try and replicate at home. Thinking it was to hard I had put it off. But really it was quite simple to do. I did a portion for 2 and put into small oval dish and cooked 1 then the other the next day. So tasty. 😋

When Parmesan cheese is on special at the supermarket, I grab one to stock the freezer with grated Parmesan cheese ready to use when needed.
No anti-caking agents or preservatives.

So I didn’t share this when I baked them on Mother’s Day as I didn’t want to spoil the morning tea surprise for my Mum, but OMG these are so delicious.

Delicious fresh juice made in minutes. This apple juice was so tasty, I only added half the amount of sugar and topped up with water to make 1 litre.

I was in need of restocking my vegetable stock paste, so with a quick clean out of the vegetable crisper of veggies that needed to be used up. A new batch of stock paste was made. When finished and popped into my jar ready for the freezer, I pop some water in the bowl to give it a rinse to make cleaning the bowl easier. Don’t throw out that water, it’s now liquid stock ready to use. Winning, no waste here. 💚

Delicious 😋 cooked one for dinner and one for lunch, the rest have gone into the freezer uncooked for future quick meals, just defrost and cook for 25 minutes.

This is the most delicious soup 🥣 I make this recipe regularly.

Yesterday I did add 2 cobs of corn 🌽 cut off the cob and added it with the veggies. It’s great to use up leftover cooked chicken.
I did add portion for 3 but the recipe can be scaled to do 3,4 or 6 portions. Lunch sorted for a couple of days. 💚
