🍲 Leftover Roast Chicken Soup
Don’t throw those leftover chicken bones away!
This is one of those recipes that feels like a warm hug in a bowl — simple ingredients, loads of flavour and a great way to use up leftover roast chicken.
Chicken + veggies + homemade stock + rice = an easy, comforting meal.
🥕 Recipe
Serves 4–6
Ingredients
* Leftover roast chicken bones + any remaining meat
* 2–2.5L water, or enough to cover the bones
* 1 tsp salt
* 2 celery stalks, chopped
* 1 carrot, chopped
* 1 onion, diced
* 2 garlic cloves, minced
* 1 tsp dried thyme
* 1 large potato, diced
* 1 cup cooked rice
* ½ tsp black pepper
* Fresh parsley, to serve
Method
1. Add chicken bones, leftover meat, water and salt to a pressure cooker.
2. Cook on high pressure for 25–30 minutes.
3. Release pressure safely, then remove the bones. Shred any remaining chicken and return it to the pot.
4. Add celery, carrot, onion, garlic, thyme, pepper and potato.
5. Simmer for 10–15 minutes, until the vegetables are tender.
6. Stir through the cooked rice and heat for another 2–3 minutes.
7. Taste, adjust seasoning and finish with fresh parsley.
