WHAT’S ON IN JUNE 🍝❄️

Winter has arrived, and with it comes a new season of Italian cooking classes in our Glebe kitchen.

Along with our regular Pasta for Beginners, regional classes and masterclasses, this winter we’re introducing a few special, more focused workshops, including a Spaghetti & Sauces Class, Risotto Class, and a Tortellini Masterclass.

Spots are limited and if you’ve been thinking about joining a class, now is the perfect time to book your winter cooking experience in Sydney.

Spaghetti alle vongole is one of my all-time favourite pasta dishes.

To celebrate the first edition of the Festival della Vongola taking place this weekend in my hometown of Pesaro, Italy, I thought it would be the perfect choice for lunch.

Simple, fresh and full of flavour. Just vongole, garlic, olive oil and a little parsley. A reminder that some of the best Italian dishes are often the simplest.

This morning, while picking up fresh produce for this week’s cooking classes at my local fruit & veg shop, I spotted some beautiful fennel.

Fennel is right in season at the moment, and the bulbs are looking particularly crisp, sweet and full of flavour. It’s one of those vegetables that can be enjoyed in so many ways…roasted, braised or sliced thinly in salads.

My favourite way to enjoy it is in a simple winter salad, like this one with radicchio (pink) and orange. Just a drizzle of good extra virgin olive oil and you have something seasonal and super fresh.

As the weather cools down, it’s easy to focus on hearty dishes and forget about fresh vegetables. Salads like this are a great reminder that winter produce can be just as exciting.

Roasted baby eggplants with pomegranate & tahini dressing

Another great produce that is in season and available at the moment is pomegranate. I really enjoy it in salads or little side dishes like this one.
Not Italian but definitely Mediterranean.

INGREDIENTS

4 baby eggplants, cut in half lengthwise
2 tbsp pomegranate molasses
2 tbsp pomegranate jewels
Handful mint leaves, roughly chopped
1 tbsp lemon juice
1/4 cup tahini
3 tbsp extra virgin olive oil, plus extra for cooking and finishing
2 tsp honey
Salt

METHOD

Preheat the oven to 200ºC and line a tray with baking paper.

Place the cut eggplants into the tray and season them with a drizzle of olive oil and salt.
Roast for 20-25 minutes or until softened and cooked through.

In a bowl combine tahini, olive oil, honey and a pinch of salt. With a whisk combine the ingredients until well emulsified. Check for seasoning.

Place the cooked eggplants on a serving plate.
Drizzle on top the tahini dressing, molasses, olive oil and lemon juice.
Finish off with a scattering of pomegranate jewels and mint leaves
