Chipotle Chicken Burrito Recipe
Ingredients
Chipotle Chicken
500g (1 lb) boneless chicken thighs or breasts
2 tbsp olive oil
2 chipotle peppers in adobo sauce, minced
1 tbsp adobo sauce
1 tsp paprika
1 tsp cumin
1 tsp garlic powder
Juice of 1 lime
Salt and black pepper to taste
Rice
2 cups cooked white or brown rice
Juice of 1 lime
2 tbsp chopped cilantro
Pinch of salt
Burrito Fillings
1 cup black beans, drained and rinsed
1 cup corn kernels
1 cup shredded lettuce
1 cup diced tomatoes or pico de gallo
1 avocado, sliced
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup sour cream
Tortillas
4 large flour tortillas
Instructions
1. Marinate the Chicken

In a bowl mix:

Olive oil
Chipotle peppers
Adobo sauce
Paprika
Cumin
Garlic powder
Lime juice
Salt and pepper

Add chicken and marinate for at least 20–30 minutes.

2. Cook the Chicken
Heat a skillet or grill pan over medium-high heat.
Cook chicken for 5–7 minutes per side until charred and fully cooked.
Let rest for a few minutes, then slice into strips.
3. Prepare the Cilantro Lime Rice

Mix cooked rice with:

Lime juice
Cilantro
Salt
4. Warm the Tortillas
Heat tortillas in a dry pan for 20–30 seconds per side until soft and flexible.
5. Assemble the Burritos

Fill each tortilla with:

Cilantro lime rice
Chipotle chicken
Black beans
Corn
Lettuce
Tomatoes
Avocado
Cheese
Sour cream

Fold in the sides and roll tightly.

6. Toast the Burritos (Optional)
Place burritos seam-side down in a hot skillet.
Cook 1–2 minutes per side until golden and crispy

Shrimp and Cherry Tomato Pasta Recipe
Ingredients
Main Ingredients
300g (10 oz) spaghetti or linguine
500g (1 lb) shrimp, peeled and deveined
2 tbsp olive oil
3 garlic cloves, minced
2 cups cherry tomatoes, halved
Seasoning
1 tsp Italian seasoning
1/2 tsp paprika
Salt and black pepper to taste
Red chili flakes (optional)
Sauce
1/2 cup chicken broth or pasta water
2 tbsp butter
Juice of 1 lemon
Garnish
Fresh parsley or basil
Grated Parmesan cheese
Instructions
1. Cook the Pasta
Boil pasta in salted water until al dente.
Reserve 1/2 cup pasta water before draining.
2. Cook the Shrimp
Season shrimp with paprika, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Cook shrimp for 1–2 minutes per side until pink.
Remove and set aside.
3. Cook the Tomatoes
In the same skillet add garlic and cook for 30 seconds.
Add cherry tomatoes and Italian seasoning.
Cook for 4–5 minutes until tomatoes soften and release juices.
4. Make the Sauce
Add butter, lemon juice, and chicken broth or pasta water.
Simmer for 2 minutes.
Add chili flakes if desired.
5. Combine Everything
Add cooked pasta and shrimp back to the skillet.
Toss everything together until coated in the light sauce.
6. Serve
Garnish with parsley or basil.
Top with Parmesan cheese.
Serve hot with garlic bread or salad.

Ingredients
Seafood Filling
250g (1/2 lb) shrimp, peeled and cleaned
250g (1/2 lb) crab meat or imitation crab
250g (1/2 lb) white fish or scallops, chopped
2 tbsp butter
3 garlic cloves, minced
Salt and black pepper to taste
1 tsp paprika
1 tsp Italian seasoning
Pasta
12 lasagna sheets
Creamy Sauce
4 tbsp butter
4 tbsp flour
3 cups milk
1 cup heavy cream
1 1/2 cups Parmesan cheese
1 cup mozzarella cheese
1/2 tsp garlic powder
Salt and pepper to taste
Cheese Layers
2 cups ricotta cheese
1 egg
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese
Optional Additions
Spinach
Mushrooms
Red chili flakes
Garnish
Fresh parsley
Instructions
1. Cook the Seafood
Melt butter in a skillet over medium heat.
Add garlic and cook for 30 seconds.
Add shrimp, fish, and crab meat.
Season with paprika, Italian seasoning, salt, and pepper.
Cook for 4–5 minutes until seafood is just cooked.
Remove from heat.
2. Make the Cream Sauce
Melt butter in a saucepan.
Whisk in flour and cook for 1 minute.
Slowly add milk and heavy cream while whisking.
Simmer until thickened.

Stir in:

Parmesan cheese
Mozzarella cheese
Garlic powder
Salt and pepper

Mix until smooth and creamy.

3. Prepare Ricotta Mixture

In a bowl combine:

Ricotta cheese
Egg
Parmesan cheese

Mix well.

4. Cook Lasagna Sheets
Boil lasagna sheets according to package instructions.
Drain and lay flat.
5. Assemble the Lasagna

Preheat oven to 190°C (375°F).

In a greased baking dish layer:

Cream sauce
Lasagna sheets
Ricotta mixture
Seafood mixture
Mozzarella cheese

Repeat layers until ingredients are used.

Ingredients
Chicken
2 boneless chicken breasts, diced
1 tbsp olive oil
1 tbsp Cajun seasoning
Salt and black pepper to taste
Pasta
300g (10 oz) elbow macaroni
Cheese Sauce
2 tbsp butter
2 tbsp flour
2 cups milk
1 cup heavy cream
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese
1 tsp garlic powder
1/2 tsp paprika
Optional Add-Ins
1/2 cup cooked bacon bits
1 jalapeño, sliced
Extra Cajun seasoning for spice
Garnish
Fresh parsley
Instructions
1. Cook the Pasta
Boil macaroni in salted water until al dente.
Drain and set aside.
2. Season and Cook the Chicken
Toss chicken with Cajun seasoning, salt, and pepper.
Heat olive oil in a skillet over medium-high heat.
Cook chicken for 6–8 minutes until browned and fully cooked.
Remove and set aside.
3. Make the Cheese Sauce

1 can (400g / 14 oz) artichoke hearts, drained and chopped
2 garlic cloves, minced
1 tbsp olive oil
Creamy Cheese Sauce
1 cup cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 tsp chili flakes (optional)
Salt and black pepper to taste
Optional Additions
1 cup cooked chicken, diced
1/2 cup mushrooms, sautéed
Instructions
1. Cook the Spinach
Heat olive oil in a skillet over medium heat.
Add garlic and cook for 30 seconds.
Add spinach and cook until wilted.
2. Prepare the Mixture

In a large bowl combine:

Cream cheese
Sour cream
Mayonnaise
Mozzarella cheese

Greek Chicken Couscous Bowl Recipe
Ingredients
For the Chicken
500g (1 lb) boneless chicken breast, cubed
2 tbsp olive oil
2 garlic cloves, minced
1 tsp paprika
1 tsp oregano
1/2 tsp cumin
Juice of 1 lemon
Salt and black pepper to taste
Bowl Base
1 cup couscous
1 1/4 cups chicken broth or water
1 tbsp olive oil
Fresh Toppings
1 cup cherry tomatoes
1 cucumber, sliced
1/2 red onion, sliced
1/2 cup feta cheese crumbles
Fresh parsley
Creamy Tzatziki Sauce
1 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp chopped dill or parsley
Salt and pepper to taste
Instructions
1. Marinate the Chicken

In a bowl mix:

Olive oil
Garlic
Paprika
Oregano
Cumin
Lemon juice
Salt and pepper

Add chicken and marinate for at least 20 minutes.

2. Cook the Couscous
Bring chicken broth or water to a boil.
Stir in couscous and olive oil.
Cover, remove from heat, and let sit for 5 minutes.
Fluff with a fork.
3. Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Cook chicken for 8–10 minutes until golden and slightly charred.
4. Make the Tzatziki Sauce

Mix together:

Greek yogurt
Grated cucumber
Garlic
Lemon juice
Olive oil
Dill or parsley
Salt and pepper

Chill until ready to serve.

5. Assemble the Bowl

Add couscous to the bowl and top with:

Grilled chicken
Cherry tomatoes
Cucumbers
Red onions
Feta cheese

Add a generous spoonful of tzatziki sauce.

Fresh parsley
Extra lemon wedges
