Tonight we got home later than I’d planned.. and our menu had to pivot - again!

With a clingy toddler on my hip (growing trend) and a moody little girl who fell asleep on the car ride home and had to be woken up 🫣 the original meal plan wasn’t going to suit, this time..

I used the same guided cooking recipe as last night (macaroni carbonara) but totally went rouge! 😅

Luckily I had already sliced up chicken thigh (thinking that was organised enough), so in the thermo at the onion step went the onion, a whole broccoli stem peeled and roughly chopped and maybe 10 whole mushrooms to get blitzed. I then continued on with the rest of the steps, adding the chicken when it was time for the high heat cook.

I will admit it did turn out a bit runny and the pasta to chicken ratio was literally half half (more protein right?) but it tasted great! Looked like a dogs breakfast but full of flavour. 😋 and as the leftovers had time to sit and cool down, it did thicken up perfectly 👌🏼

Tonight I had a bit going on.. I’m feeling so grateful to how easy the thermo made it to still get something delicious on the table - fast! 🥴

⏰ I was late to start cooking dinner
👧🏻 I had a toddler on my hip
🤢 Said toddler doing random gag spews
🦃 A child running around like a wild bush turkey

After a quick menu change to suit the situation we were back on track, we still ate later than usual BUT I was able to put out fires between cooking steps and get a delicious meal on the table for us to eat.

Macaroni Carbonara is fast, super easy, and delicious! What more could you want?!

Fresh Hot Cross Buns… and yes, we’re still making them well after Easter! 😋

Hear me out… they’re one of the best things to have stocked in the freezer!

I love making a batch in the Thermomix, letting them cool, then popping them into the freezer. They make the easiest grab-and-go snack or breakfast. They’re perfect for lunchboxes, afternoon tea with a cuppa, or those days when you have absolutely no idea what to feed the kids 😂

I know hot cross buns are usually thought of as an Easter treat, but in our house they’re definitely an all-year-round staple!

I love having a meal plan because it takes away that dreaded “what’s for dinner?” question every afternoon. It also helps me use what I already have in the fridge, freezer and pantry, which means less food waste and fewer last minute trips to the supermarket 🙌🏼

The best part? Every one of these meals can be made in the Thermomix, making dinner time that little bit easier!

Tonight’s meal - Pizza 🍕

There’s just something about homemade pizza! 🤤

Fresh pizza dough made in the Thermomix, then kept warm by the fire while little miss 3 had the best time creating her very own pizza. Then straight into the Ovana Pizza Oven, where it was cooked in no time at all! 🔥

A cheesy crust garlic pizza is always a must in our house! 🤤 The other pizzas didn’t quite make it to the camera roll tonight 😅 We also had a Hawaiian chicken and a mixed ham creation… both absolutely delicious!

Pizza nights are such a fun (and easy!) way to get the kids involved in the kitchen.

I’ve decided there’s only one thing to make when you’re visiting someone at the last minute… date scones! 😋

Today we did an impromptu visit to my Nonna, and since date scones are one of her favourites, that’s exactly what I quickly whipped up.

They’re ridiculously easy, super quick to make, and absolutely delicious. Fresh from the oven with a generous lather of butter and a cuppa? Perfect 👌🏼☕️

I’ll put the recipe I used in the comments below for anyone who wants to give them a go.

🐟 I was almost defeated by a can of tuna this afternoon… 😅

Tuna Mornay — my first time making this recipe and it definitely won’t be the last!

✅ Super simple 🙌🏼
✅ Easy to add in some extra veggies like “grated” broccoli and carrot 🥦🥕
✅ Can be prepped ahead of time and popped in the oven when you’re ready
✅ No need to boil water on the stove to cook the pasta!

Swipe through the slides to see just how easy it was. Honestly, it took me longer to get into the darn tuna can than it did to put this meal together! 🥴😂

This is the kind of family-friendly dinner I love — minimal effort, simple ingredients, and plenty of opportunities to add extra goodness.

👩🏼‍🍳 Here’s some meal plan inspiration for you all!

This week’s meal plan was built around what I already had in the fridge, freezer and pantry, with only a few extra ingredients needed from the shops 🙌🏼

Meal planning is such a great way to make the most of what you already have, reduce food waste, and take away that nightly “what’s for dinner?” mental load. It also helps keep the grocery budget in check and makes the week run that little bit smoother.

I’m definitely not perfect at it every week, but when I do sit down and make a plan, future me is always very grateful! 😆
