Tonight’s dinner
Chicken Chang Mai noodles
Using hokkien noodles, with boiled eggs.
I only use a small amount of water and the rest coconut cream as it makes it so much thicker and creamier!
Top it with crispy chilli oil and 👌🏼

Heres a Saturday cook along.

I’m heading out tonight and I wanted to do some prep and cooking before a busy day tomorrow.

Potato, leek and cauliflower soup with crispy bacon bits, I made this so I can stock up my freezer for easy lunches.

Minimal hands on time, while everything was cooking I was doing other lots of other things around the house.
