JAPANESE SPINACH SESAME SALAD🌱 [Recipe👇🏼]
Servings: 2

One of my favourite appetizers - goma-ae! Super easy and nutrient packed. The dressing can be made while the spinach cools down!

Ingredients:
- 2 tbsp toasted sesame seeds (into a paste, a blender is good to use)
- 2 tbsp low sodium tamari or soy sauce (I’m using )
- 1 tbsp mirin
- 1 tsp sugar (I subbed honey, but it imparts a different flavour)
- 1 tsp salt

Method:
Dressing
- add toasted sesame seeds into a mortar, and grind until halfway ground.
- add tamari, mirin, money and mix well.
optional:
-can add all sauce ingredients in to a blender and mix well.

Spinach:
- add water and a tsp salt to a medium pot and boil
- wash spinach well. Mature spinach can collect lots of dirt in between the leaves
- when water is boiling, arrange the spinach so all stems are bunched together, and insert only the stalks into the boiling water. Hold it hear for about 1-2 minutes (thicker the stalks, longer)
- after 1 minute, dunk the rest of the spinach leaves under water and cook for another 1-2 minutes.
- strain and immediately add to ice water bath to cool down and stop the cooking process.
- once cooled, squeeze out excess water, and cut the spinach into 1.5-2” chunks
- add to a bowl, add sesame dressing mix well and can leave in fridge. Remove about 30 minutes before serving to warm up to room temp

RICE COOKER: CHICKEN MUSHROOM RICE

I bought a cow that’s scheduled for delivery in November, so I need to make room in my freezer! Found chicken wings, veg scraps for stock, and a bunch of chicken bones!

Cooking the rice with homemade stock boost the flavour and nutrition!

Chicken marinade:
- 2 cloves garlic - grated
- Ginger - grated (~same amount is garlic)
- 2 tbsp maple syrup
- 3 tbsp tamari
- 3 tbsp oyster sauce
- 2 tbsp sesame oil
- 2 tbsp shaoxing wine
- 1/2 tsp chicken powder
- 2 tsp potato Starch
- 1 tsp pepper

Serve with steamed broccoli, cabbage...

FROZEN RICE = CONVENIENT AND BETTER

By cooling and freezing the rice, a portion of the starch turns into resistant starch, which slows digestion and helps reduce blood sugar spikes. The resistant starch resists digestion, and acts more like a fiber.

Not all the starch converts, but even a small amount can make a difference, especially if you’re trying to manage blood sugar. This simple trick has helped me keep my glucose levels more stable. And it’s super convenient for meal prep—just microwave for 1 minute!

There are lots of other ways to help manage, but this has helped me.

Also really great to have on hand when there’s no time to cook.

ESSENTIAL SAUCE TECHNIQUE

DOES WASHING RICE MATTER?

Each rice varies in starch content, and washing rice can remove lots of the this excess starch. But it can also rinse out a lot of arsenic, which is a good thing!

Washing rice before cooking is a common practice for several important reasons:

Removing Surface Starch: Washing helps remove this excess starch, resulting in fluffier, more separated grains

Reducing Arsenic Levels: Rinsing rice can help reduce the arsenic content, as some of the arsenic is present on the surface of the grains.

Enhancing Nutrient Absorption: While washing rice can remove some water-soluble nutrients, it can also enhance the rice’s ability to absorb water and cook more evenly, resulting in better texture and flavour.

Arsenic:

Plants absorb what’s in their environment, and arsenic is one of the most common elements they encounter.

Arsenic levels vary based on several factors:

Geographical region:

rice from California, India, and Pakistan has been found to have lower arsenic levels.

Rice Varieties: Different varieties of rice have different capacities for arsenic uptake. For example, some studies suggest that aromatic rice varieties like basmati and jasmine have lower arsenic levels compared to other types.

Brown vs. White Rice: Brown rice generally has higher arsenic levels than white rice because it retains the outer bran layer where arsenic accumulates. White rice, with the bran removed, has lower levels.

VELVETING BEEF [FOOD SCIENCE]

Baking soda works wonders with meat! This works with other cuts of meat too, including ground meat. This is a nice way to enhance moisture retention and tenderness with leaner cuts.

I made a ginger scallion stir fry beef as the example.

Ingredients:
- 1/4 tsp baking soda
- 16 oz sliced beef
- 2 oz water
- 2 tbsp oyster sauce
- 1tbsp maple syrup
- 1 tbsp tamari
- 1 tbsp sesame oil
- 1 tbsp shaoxing wine
- 1/2 tsp white pepper
- 2 tsp potato starch
- pinch of salt
- 1/2 onion, sliced
- 3 scallions, sliced
- 1 inch Ginger, sliced

method:
1) add the beef, baking soda, and water into a bowl to tenderize the meat (5-10 mins max!)
2) combine the oyster sauce, maple syrup tamari, sesame oil, shaoxing wine, white pepper and potato starch into the bowl. Mix and add in salt and water to desired taste and thickness
3) on high heat add in the ginger and saute for 30 seconds. then add in your onion, and give a good mix before adding in your beef
4) add beef and continually stir to prevent burning, and cook until beef cooked (1-2 mins)
5) add in the greens of the scallions for 30 seconds before turning off the heat.
6)serve with rice and eat straight from the pan! ...
