CHOCOLATE PECAN TURTLE CLUSTERS
Ingredients:
2 cups pecan halves, toasted
1 cup caramel candies, unwrapped
2 tablespoons heavy cream
1 ½ cups semi-sweet chocolate chips
1 teaspoon coconut oil or vegetable shortening
½ teaspoon sea salt (optional)
Directions:
Line a baking sheet with parchment paper. Arrange pecan halves into small clusters of three or four.
In a microwave-safe bowl, heat caramel candies with heavy cream in 30-second intervals, stirring between each, until smooth.
Spoon a small amount of melted caramel over each pecan cluster, ensuring they stick together. Let cool for 10 minutes.
In another microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring between each, until smooth.
Drizzle or coat each caramel-pecan cluster with melted chocolate. Sprinkle with sea salt if desired.
Refrigerate for 15-20 minutes until set. Enjoy!
