Ever been told your dream wasn’t a ā€œreal jobā€?
I was told childcare wasn’t a career. But I knew what I wanted. I left university, went to Teachers College, and never looked back.

Thirty years later, I’m still doing what I love. I’ve built a thriving childcare business, created programs that serve families, and helped hundreds of children grow into kind, capable humans.

The proudest thing I’ve ever done is stay true to what I knew was right for me — even when others didn’t see it.

🌿 This Week in Kelly’s Kitchen 🌿
Real meals for a real busy week—here’s what’s cooking in my kitchen:

āœ… Saturday – Started the weekend strong with crunchy chicken burgers on toasted buns topped with smoky chipotle aioli, served with crispy sweet potato fries. Simple and so good!

āœ… Sunday – Going classic with battered fish and onion rings, air-fryer style! Add some french fries, coleslaw, and a veggie plate on the side. I’ve been hunting for the perfect air-fryer recipe for this—can’t wait to try it!

āœ… Monday – My son’s request: quesadillas on the Blackstone! Some will be ooey-gooey cheese, others stuffed with seasoned chicken, maybe with a drizzle of homemade barbecue sauce. Melty, crispy, and just plain comfort food.

āœ… Tuesday – Shrimp and veggies tossed together for an easy skillet meal—fast, colourful, and full of flavour.

āœ… Wednesday – Smoked sausage skillet with yellow beans from the garden and baby potatoes. One pan, big flavour, and totally a weeknight win.

āœ… Thursday – A fresh taco salad, loaded with greens from my greenhouse and seasoned ground beef using my favourite new BIRRIA spice blend. So good… and if there’s any leftover meat, I already know where it’s going (hello, more quesadillas!).

āœ… Friday – Wrapping up the week an air fryer mac & cheese recipe on my radar for my youngest. Because who doesn’t love mac and cheese with a twist?

You won’t always feel motivated.
And you definitely won’t always feel confident—especially in the kitchen.

Some days, even figuring out what to put on the table feels like a stretch.
But if you show up anyway—meal by meal, little choice by little choice—you start building something stronger than just feelings.

I used to think being ā€œgood at thisā€ meant having it all figured out.
But now I know… it’s about showing up.
Even when it’s awkward.
Even when the meal flops.
Even when no one notices how much thought went into it.

That’s where the magic happens.
That’s where confidence starts—in the quiet, in the trying, in the showing up again tomorrow.

🌿 This Week in Kelly’s Kitchen 🌿
It’s Monday, and after a full-on Saturday, we’re keeping things flexible and doable. No batch cooking here—just a real plan to feed real people this week.

āœ… Maple Mustard Chicken Wraps – made with one of my go-to blends and served with a fresh salad on the side.

āœ… Lemon Pepper Tilapia – I grabbed a bunch of fillets and can’t wait to cook them up. We’ll pair them with baked potatoes and steamed broccoli (and yes—I’ll be adding a good shake of bacon seasoning on mine).

āœ… Butcher-Seasoned Burgers – four juicy patties grilled and tucked into toasted brioche buns, topped with bacon aioli (a non-negotiable around here). Salad or veggie sticks with dip on the side.

āœ… Ground Pork Bowls – I’ll fry up the pork with a seasoning blend (maybe maple ginger—it’s calling my name), then serve it with spiralized carrots, cucumbers, and fresh veggies. Might toss some fries on the side for my teen.

āœ… Crunchy Chicken Burgers – saving this as a backup meal for later in the week in case we run low on energy or leftovers.

✨ Behind the scenes: I’ve already prepped breakfast for the week, filled my Snackle Box with boiled eggs, olives, blue cheese, and chopped veggies, and made sure I’ve got easy lunches ready to grab. That’ll hold me over during the week when the chaos hits.

People keep asking how I’m juggling it all—work, volunteer commitments, family, meals, life…

And here’s the truth: I’m not superhuman.
But I am taking better care of myself than I ever have before.

It’s not about one product or a magic fix.
It’s about how I eat—what I choose, when I eat, and making sure I’m giving my body what it actually needs to function well.

I still make mistakes (holy smokes, I made one today šŸ™ƒ),
but I’ve learned that skipping meals or grabbing just any food doesn’t cut it for me.
As a diabetic, I need the right combination—and that’s made all the difference.

šŸ’š My Health Shift Through Food

I used to feel tired.
Overwhelmed.
Unmotivated.
And honestly… I just thought that was part of getting older or being a busy mom.

Then I started making small, intentional changes to how I eat — and the shift has been real.

I focused on adding more protein.
I found new ways to cook and actually enjoy my vegetables.
And I started seasoning them in ways that made me want to go back for seconds.

And now?

✨ I’m walking without foot pain.
✨ My blood sugar levels are coming down.
✨ The brain fog has lifted — and I’m focused.
✨ I’m sleeping better.
✨ And for the first time in years, I feel like my body is starting to heal.

All from food.

Not a fad. Not perfect. Just real, nourishing meals that work for me.
