Happy Tuesday!!
This afternoon I made a delicious quick and easy Chicken Alfredo! It’s hearty and filling too!
🥦 Broccoli was $5 for a small piece or $5.49/lb for a broccoli crown so we bought a bag of frozen broccoli for $3 instead. I cooked half the broccoli with the pasta and froze the rest of the broccoli for another meal.
🥕I diced and cooked 3 carrots and left that on the side so everyone could put as much or as little carrot as they liked.
🍗 The chicken I steamed and then sautéed in butter, salt and pepper and garlic powder. It was so good! I left that on the side as well.
🍝 For the Alfredo sauce, I tossed butter into the pot along with 3 tablespoons of flour, salt, pepper and garlic powder. Once the flour cooked for a bit and all the butter was absorbed, I added milk a little at a time to create a sauce. I did not measure the milk, I just added until it was enough, maybe about 3 cups. I let it cook until slightly thickened, turned off the burner and added Parmesan cheese and the broccoli and pasta. Stir well. Let sit about 5 minutes to thicken a bit.
Serve with additional Parmesan cheese, the carrots and chicken. I topped mine with green onion from the garden. So yummy!
