Easy Baked Rice & Egg Recipe 🍳 | Healthy Lunch Idea
This easy baked rice and egg recipe is quick, delicious, and perfect for using leftover rice. Ready in minutes, it’s a simple high-protein lunch packed with veggies and flavor.
Ingredients:
▪️ 200g leftover rice
▪️ 1 tbsp chilli oil 🌶️
▪️ Handful of chopped broccoli, red pepper & spring onions 🥦
▪️ 4 eggs, whisked and seasoned 🍳
▪️ Handful of cheese 🧀
Method:
1️⃣ Preheat oven to 180°C.
2️⃣ Add rice and chilli oil to a baking tin and mix well.
3️⃣ Spread the rice evenly across the tin.
4️⃣ Add chopped veggies and pour the whisked eggs over the top.
5️⃣ Sprinkle cheese on top.
6️⃣ Bake for 15–20 minutes until set and golden.
