Method:
1️⃣ Preheat oven to 180°C.

▪️1 and a 1/2 cups of self-raising flour
▪️1 tsp baking powder
▪️1/2 cup oil
Optional add ins: walnuts and chocolate chips

METHOD

▪️Preheat oven to 180c
▪️Add your dates to a large bowl, along with the warm milk. Blend until smooth.
▪️Add the remaining ingredients
▪️Pour into a prepared loaf tin and top with more walnuts (optional)
▪️Bake for 40-45 minutes

🛒 INGREDIENTS

▪️ 2 large sweet potatoes
▪️ 2 eggs
▪️ 1/4 cup milk
▪️ 1 spring onion, chopped
▪️ 1/2 red pepper, finely chopped
▪️ Handful of feta cheese
▪️ Salt & pepper

👩‍🍳 METHOD

1️⃣ Preheat oven to 200°C.
2️⃣ Wash & dry sweet potatoes. Prick all over and brush with a little oil.
• Bake 45–50 mins until soft
• OR air fry 25 mins
• OR microwave until tender

3️⃣ Let cool slightly.
4️⃣ Beat eggs with milk.
5️⃣ Slice potatoes in half, gently mash the center and form a well.
6️⃣ Season with salt & pepper. Add veggies.
7️⃣ Pour in egg mixture and top with feta.
8️⃣ Bake or air fry for another 15–20 minutes until set.
