So this year will be a little different. My regular flavours will be done in smaller batches unless highly ordered. Still same price and jar sizes 250ml. It’s just to keep more product for the more popular flavours.

So like I said in my earlier post today, this isn’t Sauce related, but if you have a smoker (not needed, but definitely adds flavour) you definitely need to try making homemade sun dried tomatoes.
Super easy, just needs a little bit of time.

I started with cherry tomatoes and put a heavy sprinkle of salt, as well as just a little bit of thyme.
Put them on around 1:30 on smoke setting.
At 4:15 I brought the temp up to 200 just because I put them on later than planned.
I took them off at 6. Some had started going crispy, and others leathery which is what is said to be the ideal firmness.

I let them cool and mixed with a good extra virgin olive oil and basil. Aside from a few pieces I may have over salted, it tastes amazing with the chicken parm pasta tonight!
