Colombian bandeja paisa made vegan! 🇨🇴 My version consists of rice, red beans, fried ripe plantain, salad, and half an avocado.

Normally, this dish includes a few types of meat (pork rinds, sausage/chorizo, ground beef), an egg, and an arepa, but I decided to make mine healthier and not replace those missing items. I substituted the arepa for a green salad. I also used brown instead of white rice. When I've eaten this out, I've found it to be a very heavy meal given some restaurants use meat substitutes and include the double carbs (arepa and rice) which is just too much food for me. Even as it is here, it's a very filling meal! The dish originated in the state that I'm currently staying in: Antioquia.

Jamaican fried breadfruit 🇯🇲

The closest comparison to a breadfruit would be a potato. It is enjoyed throughout the Caribbean and can be boiled, fried, mashed, or added to a stew. To avoid deep frying, I boiled these pieces first and then lightly fried them for an exterior crunch. As breadfruit is very starchy, they crisp up nicely without a lot of oil.

Along with callaloo, breadfruit is a favorite Caribbean food of mine 😋

Jamaican Ital food plate 🇯🇲

Ital (which is vital; drop the v) is what plant-based food is called in the Rastafari religion, and it's one of its core principles. There are Ital restaurants all over Jamaica and they are often simple establishments offering a plate of the day as well as fresh juices or extracts made of medicinal roots and herbs. Whole food ingredients are used, the food is seasonal and local, and it's healthy. It feels good to eat it. I'm really enjoying eating out but I thought I should make some typical Ital food at home too!

My plate consists of Jamaican callaloo fried with scallions, garlic, and tomato, breadfruit in BBQ jerk sauce, and a Jamaican dish called Turn or Tun cornmeal, which is like polenta but flavored quite differently with coconut milk, tomato, scallions, green pepper, thyme, allspice, pepper, garlic, and chilli flakes. Typically, a plate of the day consists of a grain/carbohydrate (like rice), plant protein (tofu, beans, or lentils), and a vegetable dish.

While my meal wasn't super protein heavy, it was super yummy. Ya, mon!

Jamaican jerk tofu 🇯🇲

Jerk seasoning first originated during the era of African slavery. Escaped slaves (known as Maroons) were taught by the indigenous Taino people how to preserve meat with spices and plants which helped them stay undetected as they didn't need to always use fire. With their African culinary influences added, this fusion makes the jerk seasoning we know today.

Jerk seasoning is made of several herbs and spices. The key ingredients are the hot peppers (Scotch bonnet if making a marinate seasoning) and fragrant allspice. I made a dry jerk seasoning for this tofu. While I was missing onion powder and cayenne, I did have everything else: allspice, garlic powder, hot chili flakes, paprika, ginger, cinnamon, nutmeg, thyme, parsley, pepper, salt, and brown sugar.

Trinibagonian green fig (or plantain) pie 🇹🇹

Essentially, this pie is a mixture of 4 mashed green plantains and a cheesy cream that is baked for about 45 minutes. I boiled the plantains whole for about 20 minutes which made it easier to take the peel off. My vegan creamy cheese mixture was made with half a cup of coconut milk, half a cup of cashew cream (blended cashews and water), and a block of cheddar cheese. It was spiced up with onions, garlic, green peppers (pimentos are often used for an added sweetness), and thyme. I put a few spicy Trini Scotch Bonnet peppers on top which I nibbled at between bites 🌶️ 🥵 It's kinda like a potato cheese pie and due to how heavy it is, best served with a salad.

Adzuki red beans are often used in Japanese, Chinese, and Taiwanese sweets, so they would be great for this. As I didn't have any, I used red kidney beans and rinsed them well of excess salt. Half a cup of red beans was blended with 2 bananas, a dash of coconut cream, water, a heaped tablespoon of h**p seeds, half a cup of oat flour, and a touch of cinnamon!

A healthy Trini meal! 🇹🇹 Star fruit salad (known here as five-finger salad), creamy callaloo, and pigeon peas and rice.

The five-finger salad is dressed with grated garlic, lemon juice, olive oil, s+p, and culantro (a local type of cilantro). As it isn't a very sweet fruit, it works really well as a savory side.

I made callaloo and pigeon peas and rice a few posts ago, but I made it again this week because it's so yummy!

Caribbean-inspired pumpkin and oat gluten-free pancakes with homemade papaya jam 😍

I had a craving for something sweet but not fake and ultra processed, so I used local produce grown right here in Trinidad to make something healthier 🇹🇹

Half a cup of mashed pumpkin was mixed with a cup of ground oats, a teaspoon of baking powder, a tablespoon of brown sugar, and enough coconut milk to make a thick batter. Tip: these pancakes aren't as sturdy as regular pancakes, so you really need to wait until they are fully cooked before flipping them over.

The papaya jam was made with a cup of blended papaya, a tablespoon of brown sugar (you don't need a lot), and a good squeeze of lemon juice. It was cooked until it thickened up. I served mine with banana slices and h**p seeds for protein!

I had some bananas that were very soft, so I made banana jam with them 🍌 For 2 mashed bananas, I added 1/4 raw sugar and juice from half a lemon. Then it was cooked on low heat for 10 minutes or so. It turned out pretty good! It went really well with peanut butter and raisins on coconut bread made here in Tobago 🇹🇹

Caribbean-inspired breakfast: passion fruit oatmeal with raisins and spices (nutmeg and cinnamon) served with banana, flaxseed, and walnuts. Several notes that play on your tastebuds. Darn healthy too and packed with healthy protein, fats, and carbs!
