Colombian bandeja paisa made vegan! 🇨🇴 My version consists of rice, red beans, fried ripe plantain, salad, and half an avocado.
Normally, this dish includes a few types of meat (pork rinds, sausage/chorizo, ground beef), an egg, and an arepa, but I decided to make mine healthier and not replace those missing items. I substituted the arepa for a green salad. I also used brown instead of white rice. When I've eaten this out, I've found it to be a very heavy meal given some restaurants use meat substitutes and include the double carbs (arepa and rice) which is just too much food for me. Even as it is here, it's a very filling meal! The dish originated in the state that I'm currently staying in: Antioquia.
