🍊 Orange Almond Cake 🌰
Ingredients:
For the Cake:
1 ½ cups almond flour
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 cup granulated sugar
1 cup unsalted butter, softened
4 large eggs
1 teaspoon vanilla extract
Zest of 2 oranges
½ cup freshly squeezed orange juice
For the Orange Glaze:
1 cup powdered sugar
2-3 tablespoons freshly squeezed orange juice
1 teaspoon orange zest
For Decoration:
Thin slices of fresh orange
Slivered almonds
Instructions:
➤ Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
➤ Prepare the Dry Ingredients: In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
➤ Cream the Butter and Sugar: In a large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.
➤ Combine and Mix: Gradually add the dry ingredients to the butter mixture, alternating with the orange juice. Mix until just combined.
➤ Bake the Cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
➤ Prepare the Orange Glaze: In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. Adjust the consistency by adding more juice if too thick or more sugar if too thin.
➤ Glaze the Cake: Once the cake is completely cool, drizzle the orange glaze over the top, allowing it to drip down the sides. For a finishing touch, garnish with thin slices of fresh orange and a sprinkle of slivered almonds.
