Ingredients
4 thick-cut beef chops (bone-in ribeye, sirloin, or chuck chops work well; about 1–1.5 inches thick)
1 cup barbecue sauce (your favorite smoky or sweet variety)
¼ cup honey or brown sugar
3 tablespoons soy sauce or Worcestershire sauce
2 tablespoons apple cider vinegar
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon onion powder
½ teaspoon black pepper
½ teaspoon salt (adjust to taste)
1 tablespoon olive oil or butter (for searing, optional)
Optional: 1 teaspoon chili flakes or hot sauce for heat
Fresh rosemary or thyme sprigs for garnish (optional)
Preparation Method (Slow Cooker):
Optional searing step (highly recommended for better flavor):
Heat olive oil or butter in a large skillet over medium-high heat. Season the beef chops with salt, pepper, smoked paprika, and onion powder. Sear the chops for 2–3 minutes per side until nicely browned. This step locks in juices and adds depth.
In a medium bowl, whisk together the barbecue sauce, honey (or brown sugar), soy sauce/Worcestershire, apple cider vinegar, minced garlic, and any remaining spices.
Place the seared (or raw) beef chops in the bottom of your slow cooker. Pour the sauce mixture evenly over the chops, making sure they are well coated. Add a few rosemary sprigs on top if using.
Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the beef is very tender and reaches your desired doneness (internal temp around 145–160°F / 63–71°C for medium, or higher if you prefer well-done and fall-apart tender).
About 30 minutes before serving, you can shred a portion of one chop with two forks (as seen in the image) for variety, or leave them whole. Baste the chops with the thickened sauce from the bottom.
Optional: For a thicker, stickier glaze, transfer the sauce to a saucepan and simmer on the stove for 5–10 minutes until reduced, or mix in a cornstarch slurry (1 tsp cornstarch + 1 tbsp water) directly in the slow cooker on high for the last 30 minutes.
Serve the glazed beef chops hot, spooning extra sauce over the top. Garnish with fresh herbs, cracked pepper, and a side of mashed potatoes, roasted vegetables, or rice.
