β€’ 2 lbs boneless pork shoulder, sliced thin
β€’ 1 cup canned pineapple chunks in juice, divided
β€’ 3 dried guajillo chiles, stemmed and seeded
β€’ 2 dried ancho chiles, stemmed and seeded
β€’ 4 cloves garlic
β€’ 1/2 white onion, half reserved for serving
β€’ 2 tablespoons white vinegar
β€’ 1 teaspoon dried oregano
β€’ 1 teaspoon ground cumin
β€’ 1/2 teaspoon smoked paprika
β€’ 1/2 teaspoon chipotle powder
β€’ 1 teaspoon kosher salt
β€’ 2 tablespoons vegetable oil
β€’ 16 small corn tortillas
