* 60 g sugar
* 1 packet vanilla sugar
* 1 egg white
* Speculoos cookies, crushed and whole for decoration

1️⃣ Prepare the Strawberries
Wash and hull the strawberries. Cut them into pieces and place them in a bowl with the sugar and vanilla sugar.
2️⃣ Make the Strawberry Purée
Blend the strawberries until smooth and fragrant. If you prefer a rustic texture, mash them with a fork.
3️⃣ Whip the Egg White
In a separate bowl, beat the egg white until stiff peaks form. The mixture should be light and airy.
4️⃣ Fold Gently
Carefully fold the strawberry purée into the whipped egg white using a spatula. Mix gently to keep the mousse fluffy.
5️⃣ Assemble the Glasses
Add a layer of crushed speculoos cookies to the bottom of each glass. Spoon the strawberry mousse over the cookie layer.

Refrigerate for at least 1 hour. Before serving, top with whipped cream, fresh strawberry slices, and a speculoos cookie.
