Sweet chilli pork bites

This is a really simple and quick meal done in the air fryer. I used tenderloin of pork which is a very lean cut of meat and will cook very quickly, but feel free to use pork belly (in fact this is probably a better option as it's less likely to dry out!). The air fryer makes sure the meat has a nice crust but still keeps the inside tender. You can swallow fry or bake in the oven if you prefer. I served it with egg fried rice and a sriracha mayo, but this can easily be served with noodles, on a salad, or simply with a soy sauce/vinegar chilli dip. Make it your own. Because that's how cooking works.

Ingredients:

600g pork tenderloin cut into bite sized cubes
4 tbsp soy sauce
4 tbsp sweet chilli sauce
1 tbsp honey
1 tbsp brown sugar
2 tsp rice vinegar
0.5 tsp ground ginger
2 tbsp pineapple juice
1 tsp mirin
0.5 tsp salt
1 tsp pepper

In a large bowl, mix the pork with all the listed ingredients. Marinade for at least 4 hours in the fridge.

In a preheated air fryer at 180 degrees, place the bites in the basket. Do not overcrowd, cook in batches if needed. Cook for 6 minutes then brush some of the marinade over the meat. Cook for another 5 minutes.

Serve with egg fried rice and sriracha mayo (mayonnaise, sriracha, honey and pinch of salt mixed together). Sprinkle over some chilli flakes if you like.

Easy beef bowl

I feel extremely rough. Here's a simple and tasty beef bowl with sriracha mayo. Enjoy. Or not. Who cares.

Ingredients:

For the beef:

500g beef mince 
1 tbsp oil
1 onion chopped
3 garlic cloves crushed
1 tsp ground ginger
2 tbsp dark soy sauce
3 tbsp oyster sauce
1 tbsp brown sugar
1 tbsp mirin
Salt and pepper to taste

For the sriracha mayo:

3 tbsp mayo
1-2 tbsp sriracha
Juice from half a lemon
Pinch garlic granules
Pinch salt and pepper

To serve:

Fried eggs
Steamed rice

Mix the mayo ingredients in a small bowl. Set aside.

In a pan on medium high, heat oil and fry the onions until soft.

Break up the beef mince and cook until the moisture has evaporated and the meat is sizzling. Drain any fat if needed. Add in the garlic and cook until fragrant.

Sprinkle in the ground ginger, salt and pepper and cook for another minute. Add in the sugar, soy sauce, oyster sauce and mirin and cook and reduce for a few minutes.

Serve with steamed rice and a fried egg on top. Drizzle the sriracha mayo all over.

Pancit Bihon

A Filipino classic. I love the chewiness of the thin rice noodles, which soaks up all of that flavourful meaty broth. The great thing about pancit is, you can put pretty much whatever you want in it. I just went for the simple classic option - pork belly, chicken, carrots and cabbage. Squeeze over some lemon juice, and you've got the perfect noodle dish for a main or as a side. And it's great for parties. Add a boiled egg if you want, but that would make you a psycho.

Ingredients:

2 chicken breasts sliced into small strips
2 pieces of belly pork cut into small chunks
1 large carrot sliced thinly
1 onion diced
2 tbsp oil
Half a cabbage chopped
4 garlic cloves crushed
1 tsp salt
1 tsp pepper
3 tbsp dark soy sauce
3 tbsp oyster sauce
400ml chicken stock
400ml hot water
250g dried thin rice noodles/vermicelli/bihon
Lemon wedges to serve

Fry the carrot sticks and cabbage in 1 tbsp oil on medium high heat until softened and slightly charred - about 10 minutes. Remove the veg and set aside.

Fry the onion in 1 tbsp oil for a few minutes until softened. Add the garlic and fry until fragrant.

Add the pork belly pieces and cook until the fat has rendered. Add in the chicken pieces and season with salt and pepper. Cook until the chicken has cooked through.

Add the soy sauce and oyster sauce. Mix until combined and let it reduce over 5 minutes on high heat. 

Pour in the stock and water. Let the meat slow cook for 10 minutes.

Remove the meat and add in the noodles. Let the noodles absorb the broth. Keep stirring until the noodles are cooked and the broth has disappeared.

Add the veg and meat back in, and give everything a good stir. Serve immediately with a squeeze of lemon juice.
