Your temperature probe is only as reliable as your last calibration check. Under Regulation (EC) 852/2004 and the Food Safety Act 1990, UK food businesses are legally required to ensure temperature monitoring equipment is accurate and fit for purpose. There's no fixed statutory interval — but 'fit for purpose' means you need documented evidence that your probes are calibrated, checked, and corrected regularly. Ice-point checks (0°C in crushed ice slurry) should be logged every single service. Formal calibration records need dates, results, and sign-off. If your probe reads 2°C high and you're storing at what you think is 5°C, you're already outside legal limits — and you won't know it. An EHO will ask for those records.
