and we're back at it with another jam!! my mum travelled to πŸ‡¬πŸ‡ last month and brought me back some mangoes, so i finally got the chance to make one of my favourite jams to date - mango and lime jam!! i've only made it a handful of times, but it tastes a lot better with in-season mangoes... and i genuinely think this is my best batch yet!! 😍

so i made peach upside down cake... last week??? which was soooooo good, but my dad said it was too sweet for his palette. so i took that as a challenge. for sweetening, i used banana and honey instead of sugar, i layered with both peaches and banana and drizzled with honey, and then in the batter itself i folded in dried cranberries and raisins. and it turned out BEAUTIFUL.

i love salted caramel so much, and did not disappoint with this one. i could actually taste the salt in the salted caramel, it was far more intense than most and actually very enjoyable!! i was really impressed, and i want to have it again and again!! maybe next time i should just make myself a bigger serving πŸ˜‚

the peach upside down cake i made the other week went down sooooo well!! a basic sponge, with vanilla and nutmeg, and then i syruped some peaches in dark brown sugar and honey and folded those in! and then added some syrup to the peaches i layered at the bottom, as well as spread some on top of the cake itself. pineapple upside down cake was one of my favourite desserts in primary school, so this was like bringing back good memories but better!!

this??? with custard??? 🀀

i am not afraid to admit that i was very nervous trying this hot chocolate, mostly because i am still not completely sure that i particularly like dark chocolate, but i was... at least a little impressed by it!! i definitely feel like this is a hot chocolate that goes with flavours - it would taste wonderful with black forest/cherry, or maybe even orange syrup! or salted caramel 🀀 i'm more excited about flavouring this up than i was with the other hot chocolates πŸ˜‚

back with another flavour of the hot chocolate!! we're doing 41% this time around, which is softer and sweeter and probably more suited to someone with a sweet tooth like mine!! still, i ended up finding it sweet enough that i didn't really want to pair it with any other flavours, which is unlike me. still, it could end up in my advent calendar and then i pair it with something anyway, knowing me πŸ˜…

i definitely enjoyed this flavour, though. as i said, more suited to me and my palette, and so more enjoyable overall!

this was such a fun recipe to try out!! and it tasted soooo good!! the original cinnamon roll muffins recipe can be found over on but you can find the exact measurements i used for these muffins below!!

ingredients:
228g melted unsalted butter
150g granulated sugar
2 tsp vanilla extract
2 eggs
2 ripe bananas, mashed
237g greek yoghurt
237g milk
438g plain flour
4 tsp baking powder
2 tsp cinnamon
1 tsp salt
2 handfuls (-ish) chopped dried plums
cinnamon sugar (1 tsp cinnamon + 67g granulated sugar)
topping jam (5 chopped plums; 120g granulated sugar; 1 tbsp honey)

recipe:
1) preheat the oven to 220Β°C (200Β°C fan)
2) mix the melted butter and the granulated sugar.
3) then add the vanilla, eggs and mashed bananas and mix until smooth.
4) add the yoghurt and the milk and mix until smooth.
5) add in the dry and slowly mix until just mixed in: plain flour, baking powder, cinnamon and salt.
6) fold in dried fruit (i used plums!!)
7) half fill each muffin case with batter, sprinkle with cinnamon sugar, then fill the rest of the way with batter and top with cinnamon sugar
8) bake in oven for 5 minutes, then lower the oven temperature to 180Β°C (160Β°C fan) and bake for a further 17-20 mins
9) whilst the muffins are baking, add the topping jam ingredients to a pan and cook down to a soft jam. leave to settle for at least 15 mins
10) once baked and cooled a little, top the muffins with the jam and serve!!

another new bake!! this one is actually from a few weeks ago, and was something i've been wanting to try making all summer. yep, i finally took the chance to do exactly that!!

a black forest brownie base, baked cheesecake filling, and black forest jam with extra cherries and dark chocolate chips on top!! it was absolutely scrumptious, and my taste testers thought the same thing πŸ˜‹

maybe next time i'll try with a no-bake cheesecake centre, to make it lighter πŸ€”

my first attempt at an ombre cake, fully knowing that my basic icing skills still need soooooooo much improvement. BUT i'm really proud of this one!!

it was absolutely inspired by my trip to greece (aj stop talking about greece challenge: failed instantly) which is why i used those flavours. the honey was this really nice pine and heather greek honey that i bought, but obviously the pomegranate and the pistachios were from tesco lol

any tips on smoothing over icing to make it look cleaner? πŸ₯ΊπŸ‘‰πŸΎπŸ‘ˆπŸΎ
