Sweet and mildly spicy sausage, chorizo and chilli jam rolls!

INGREDIENTS
400g pork sausage meat
3 tbsp chili jam
65g diced chorizo
320g puff pastry, ready rolled
1 egg yolk
Sesame seeds and nigella seeds for garnish

METHOD

Pre-heat the oven to 210°C (190°C fan).

Mix sausage meat, chorizo and chilli jam in a medium sized bowl.

Unroll the puff pastry and cut in half lengthways.

Divide the sausage mixture in half and roll into two logs roughly the same length as the puff pastry, then place them in the middle of each piece of pastry.

Take one side over the top of the sausage then bring the other side over and pinch the two edges together to seal. Roll so the seam is underneath. Repeat with the second piece of pastry.

Cut into 12 equal pieces.

Brush the egg yolk down one side of each piece of pastry.

Sprinkle the nigella seeds over the top.

Bake for 25 minutes.

Serve warm or cold.

Nutella filled chocolate chip cookies. These cookies are crispy at the edges and chewy in the middle. Wonderful!

140 g salted butter (melted)
130 g of brown sugar
90 g of white sugar
1 egg
245 g of flour
3 g of baking soda or 1/2 tsp of baking soda
200 g of dark or milk chocolate pieces
1 pinch of salt
300 g of Nutella

Preparation:
Mix the sugars with the melted butter. Add the egg and mix.
Add the flour and baking soda.
Add the chocolate pieces and mix for the last time. Form dough balls of about 55 or 58g each.
Refrigerate the dough for several hours.

After a few hours, take out the balls of dough from the refrigerator about 30 minutes before baking. Bake for 10 minutes at 175°C in a preheated oven.

Add a pinch of salt (optional) on top and let them cool slightly.

Fill, cover and enjoy.

Square sausage recipe

Ingredients:
450g minced beef (20% fat)
450g minced pork (20% fat)
250g natural breadcrumbs
1 tsp ground black pepper
1 tsp salt ( add to taste)
1.5 tsp coriander
0.5 tsp nutmeg
0.5 tsp mace
120ml cold water

Instructions:
Line your loaf tin, or whatever you’re using to make the square sausage, with clingfilm, with enough hanging over the edges to wrap over the opening once you’ve put the sausage meat in it.
Add all the ingredients to a bowl and use your hands to thoroughly combine.
Squash the sausage meat into the loaf tin as densely as possible. If you have any leftover you can set aside to make meat patties out of it!
Wrap the clingfilm over the top so it’s fully covered and place in the freezer for 2 hours, or until firm enough to slice.* Alternatively, leave it in the refrigerator for 24 hours until it is firm.
Remove the sausage from the tin using the clingfilm to lift it out and then cut into 1cm slices.
You can use it immediately, put it in the fridge to be used within the next 2 days, or put pieces of baking paper between slices and place them in a container to fully freeze and pull out to use as you wish.
Cook in a frying pan for a few minutes each slide or grill and then serve in a morning roll with your choice of sauce, or as part of a full Scottish breakfast!
