A few years ago, I would have walked straight past rosemary growing in a garden.
Now I find myself pairing it with roasted apricots on toast and thinking about how tastes change over time.
The things I enjoy cooking today are often very different from what I would have chosen years ago.
These days, I'm drawn to simple but flavourful combinations. A slice of toasted bread, something creamy like cream cheese, Greek yoghurt or whipped feta, sweet roasted apricots, and a little rosemary from the garden.
Just a few ingredients that somehow work beautifully together.
It's the sort of snack that keeps you going through the afternoon while encouraging you to slow down for a moment and enjoy it.
I suppose that's one of the things I love most about food.
Not just the flavours, but the way it changes with us.
The ingredients we once ignored become favourites, old recipes evolve, and sometimes the simplest things bring the most joy to our everyday lives.
