🌍 Happy Earth Day!

Today is all about small changes that make a big difference — and honestly, one of the easiest swaps in my kitchen has been my Thermomix

Why it’s a little eco-hero in disguise:

Less food waste – weigh as you go, use up leftovers, and cook only what you need

Energy efficient – one appliance replaces multiple gadgets (hob, blender, steamer, slow cooker… less power overall!)

Use every part of your ingredients – stalks, peelings, herbs… all turned into something delicious

Less packaging – make your own sauces, spice mixes, yoghurt, stock, even breadcrumbs instead of buying packaged versions

Self-cleaning – less water, less effort, and no pile of dishes, wash it while you eat!

Cook from scratch – fewer processed foods, more wholesome, planet-friendly meals

It’s not about being perfect — just making better choices where we can, plus I love the look of it! 😂

Weather might be wild… but today is all about pure comfort food 😍

It’s National Grilled Cheese Sandwich Day — aka the ultimate excuse to live your best toastie life!

Fun fact: the grilled cheese sandwich became popular during the 1920s when sliced bread and processed cheese made it cheap, quick, and irresistible… and honestly, not much has changed!

Whether you keep it classic or go a bit fancy (cheddar & chutney, brie & cranberry), the Thermomix makes the filling a dream — think perfectly grated cheese blends, homemade chutneys, or even a quick tomato soup for dunking.

Do you know you can grate a block of cheese in seconds?! I always have a tub of grated ready. Supermarket grated cheese is covered in starch, to prevent it sticking. No additives here!

National Cheese Fondue Day – Thermomix Style!

Did you know…

cheese fondue was originally created in Switzerland as a way to use up hardened cheese and stale bread during winter?
Safe to say they accidentally created one of the BEST comfort foods ever!

And today… we let the Thermomix do the hard work.
No lumps. No burning. No standing stirring endlessly while everyone else eats!

Just silky, melty, perfectly blended cheese ready for dunking:

Crusty bread
Roast potatoes
Steamed veg
Even sausage or ham if you’re feeling fancy

Warning: double dipping may cause serious family disputes…

Yesterday’s weather was a bit wild, so naturally… I cooked 😄

A proper comfort-food kind of day:
• Salsa verde
• Quick Greek yogurt bread rolls
• Spring rolls
• Sweet chilli sauce (for dunking, obviously)
• Italian baked beans 😋
• Chicken and leek pie (forgot the pics… typical!)
• Broccoli, mustard & cheese pasties

Some days just call for being in the kitchen — and I’m happy with that!

After 2 months in Mexico a few years ago, there was one thing that came with everything — breakfast, lunch and dinner — and I completely fell in love with it. It’s now a regular in my fridge! Salsa verde!

You can roast the tomatillos first for a deeper flavour… but honestly, this version is so quick and easy I’ve become a bit lazy and just make it fresh!

How to use it
Tacos, nachos, grilled chicken
Drizzle over eggs (game changer)
Stir into mayo = instant dip
Or… straight from the spoon (no judgement)

Got corn tortillas sitting in the bread bin needing used? Cut them up and bake for homemade “Doritos” — perfect for dipping. Or go all out and make your own tortillas… also much easier than you’d think!

Did you know today (8th April) is National Empanada Day?

Basically… it’s a socially acceptable excuse to wrap anything delicious in pastry and call it dinner.

Fun food fact:
Empanadas date back to Spain and Portugal, but the idea of stuffing food into dough is even older — humans have basically been making “portable pies” since forever. So technically… pasties, samosas, and even sausage rolls are all part of the same brilliant “food in pastry = happiness” club.

Honestly, whoever first thought “let’s put dinner inside bread so we can carry it around” deserves a medal.

If you’ve got a Thermomix, you can whip up fillings, dough, AND avoid most of the mess…

So… what are you putting in yours? Sweet? Savoury? Bit of both if no one’s watching?

I’ll be making a few today! Made these Argentinian chicken ones before and were delicious!

Lover of waste not want not, I have a tub of delicious caponata to finish, so that will fill a few! Might even pop them made and ready to cook into the freezer for and easy dinner day!

Today (7th April) is National B**r Day (mainly celebrated in the US, but we’ll happily borrow it 🍻).

Fun food fact:
B**r isn’t just for drinking — it’s brilliant in cooking because the bubbles and yeast help tenderise food and add depth of flavour (especially in breads, batters, and slow-cooked dishes).

Thermomix twist:

You can use b**r in your Thermomix to:
Make fluffy b**r bread – no yeast needed, the b**r does the work

Create light, crispy batter for fish or onion rings (perfect texture!)

Boost flavour in stews – swap part of your stock for ale in a beef stew

Cheese & b**r sauce – melt cheddar with a splash of b**r for next-level mac & cheese or loaded fries

Quick idea:
Throw together a b**r bread in minutes: flour, baking powder, a pinch of sugar, your favourite b**r → mix → bake. Done.

As it’s also officially national No Housework Day… I’m fully embracing it! The Thermomix has me covered anyway — it chops, cooks, steams and even pretty much cleans itself. Quick rinse, a drop of washing-up liquid, 10 seconds on turbo and done. Minimal mess, minimal effort, maximum food. If only the rest of the house worked like that!
