Sunny eggs meet juicy tomatoes in this simple, soul-warming Breakfast 🥚🍅✨

Fresh tomatoes simmer just enough to release their sweet, tangy juices, blending perfectly with golden fried eggs. Seasoned to perfection and garnished with fresh herbs, it is comfort food with a fresh twist.

Ingredients:

-3 tomatoes (halved)
-5 eggs
-1 tablespoon extra virgin olive oil
-1 garlic clove, minced
-1/2 teaspoon dried oregano
-salt and pepper, to taste
-fresh parsley to garnish

Instructions:

1. Heat one tablespoon of oil in a pan, add the tomatoes, cover and cook for 10 minutes until they are soft. If your tomatoes are not so juicy, you can add a little bit of water to the pan.
2. Peel the skin of the tomatoes and mash them with a wooden fork or spoon. Add the garlic, oregano, season with salt and pepper and give it a mix.
3. Crack the eggs on top of the sauce, season with a pinch of salt, cover and cook until they are set, about 8-10 minutes.
4. Season the top with more black pepper and add fresh parsley (or any herb that you like). Enjoy!

Chilli Lime Roasted Cauliflower 💚

Ingredients:

-1 medium cauliflower, cut into florets
-1 tablespoon extra virgin olive oil
-1 teaspoon paprika
-1 teaspoon garlic powder
-1/2 teaspoon salt
-black pepper

Sauce
-2 tablespoons extra virgin olive oil
-zest from 1 lime
-juice from 1/2 lime
-1 tablespoon honey
-1 teaspoon chilli flakes
-fresh parsley, finely chopped

Instructions:

1. Preheat your oven to 200 degrees C.
2. In a large bowl toss together the cauliflower florets, olive oil, paprika, garlic powder, salt and pepper.
3. Like a baking tray with parchment paper and add the seasoned florets in a single layer. Roast for 20-30 minutes, or until the edges are browned and the insides are tender.
4. For the sauce, add all the ingredients to a small pan and cook on low heat for about 1 minute.
5. Spoon sauce over cauliflower and serve. Enjoy!

Creamy Mackerel Paté with roasted red pepper and walnuts: smoky, soft, and comforting in the best way. 🐟

It is the kind of food you make out of curiosity and end up craving again the next day. Simple ingredients and just really good flavour that sneaks up on you.

Ingredients:

-1 tin of mackerel in oil, drained
-1 tablespoon cream cheese or Greek yogurt
-1 garlic clove
-30g walnuts
-1 medium red bell pepper, roasted of charred
-salt and pepper to taste
-1 teaspoon lemon juice
-a pinch of chilli flakes (optional)

Instructions:

1. In a food processor or blender add all the ingredients and pulse until smooth. Serve with crackers, sourdough bread or fresh veggie sticks. Enjoy!

Imagine warm, roasted bone marrow whipped into a silky, decadent spread, rich, buttery and so savoury. 🔥

It melts the moment it hits toasted bread, leaving that deep, velvety flavour you only get from slow-roasted marrow. A squeeze of lemon, a little flaky salt, maybe fresh herbs… and suddenly it is not just a spread, it’s a full-on experience.

Ingredients:

-2-3 beef marrow bones (cut lengthwise or cross-cut)
-salt and pepper

Topping ideas: flaky salt, fresh thyme, fresh squeezed lemon juice, lemon zest, chives, pickled onions, capers, micro greens, paprika, chilli flakes, caramelised onions, shaved Parmesan cheese, truffle salt.

Instructions:

1. Pat dry the bones and place them cut-side up on a baking sheet, season with salt and pepper.
2. Bake at 220°C / 428°F for 15–20 minutes, until the marrow is bubbling and slightly pulling away from the bone. Do not overcook, it should stay soft and buttery, not dry.
3. Let them cool for 1–2 minutes. Use a small spoon or knife to scoop the marrow into a bowl. Refrigerate for 5-7 minutes.
4. Using a stand mixer (or hand mixer) whip the marrow on medium speed for 1–2 minutes until smooth, creamy and fluffy. Optional: drizzle in a teaspoon or two of olive oil or softened butter while whipping for an extra silky texture.
5. Add more salt, lemon, or herbs if needed. Enjoy!

Tonight’s dinner was one of those simple meals that somehow feels extra special: steak, fresh salad, and new potatoes with dill made the way my mum used to make them when I was growing up. 🥹❤️

Crisp, tangy, and just a little sweet, they add the perfect pop to everything from tacos to grain bowls. Simple ingredients, bold flavour, this is how you wake up a plate. 🫜🫜🫜

Ingredients:

-250-300g fresh radishes, thinly sliced
-fresh dill
-1 teaspoon black peppercorns
-1 teaspoon salt
-1 teaspoon honey
-90 ml apple cider vinegar
-180 ml hot water

1. Thinly slice the radishes and place them in a clean glass jar.
2. Add in the dill, black peppercorns, salt and honey. Pour vinegar and water ensuring they are fully submerged.
4. Seal the jar with a lid and place it in the fridge.
They will be ready to enjoy after 2 hours.
5. Store them in the refrigerator for up to 7-10 days.

Made these fluffy kefir flower pancakes for the kids 🌸🥞

I used sliced strawberries in the middle and piped the pancake batter into petals using a plastic bottle to create the flower shape, such a fun little breakfast idea! ❤️

The kefir makes the pancakes extra soft and fluffy, with a light tangy flavour that goes so well with fresh fruit. It is also great for gut health because it contains natural probiotics that support digestion, making these pancakes a nourishing start to the morning for the whole family ✨

Ingredients:

-1 egg (room temperature)
-150 g kefir (room temperature)
-1 tablespoon honey or maple syrup
-85-90g plain flour
-½ teaspoon baking soda
-½ teaspoon baking powder
-pinch of salt
-½ tsp vanilla (optional)

Instructions:

1. Whisk the wet ingredients together, add the dry ingredients, and mix gently until combined. Let the batter rest for 5 minutes.
2. Heat a lightly greased pan over medium heat. Pour the batter into a plastic bottle for easier piping.
3. Place one slice of strawberry in the center of the pan. Pipe the first petal around the strawberry. Wait a few seconds for it to set slightly before piping the second petal. Repeat the same process until you have 5 petals around the strawberry.
4. Let the pancake cook until bubbles appear, then carefully flip and cook the other side until golden. Enjoy!

That’s all it takes to turn raw onions into a crave-worthy topping. These Quick Pickled Onions are crisp and punchy in the best way, the kind of little extra that makes a meal taste finished.

Ingredients:

-1 medium red onion, thinly sliced
-salt and pepper, to taste
-1 teaspoon honey
-1 teaspoon dried herbs
-juice from 1 lemon
-2-3 tablespoons vinegar
-1 tablespoon extra virgin olive oil

Instructions:

1. Add sliced onions to a jar or container with a tight lid.
2. Add salt, pepper, honey, dried herbs, lemon juice, vinegar and olive oil. Seal and shake hard for 10-15 seconds until everything is well mixed.
3. Let sit at room temperature for about 10 minutes. Adjust seasoning if needed and serve. Enjoy!
