This beautiful delicious Smoky Red Mullet Fillet with Cool Cucumber Salsa by the amazing Sian (Must Follow!)🤩
Made with cucumber, tomatoes, capers, salad onions, parsley, lime juice, Smokin’ Red Blend and virgin olive oil! 😋
To make (for 2)
🐟 Start by making the salsa with a couple of cherry tomatoes, a third of a medium sized cucumber, two spring onions and a small bunch of parsley, all finely chopped in a bowl, along with the juice from at least half a lime and two tbs of extra virgin olive oil. Add in a tsp or two of small capers, a couple of crushed dried chillis (or a few chilli flakes) and a good pinch of sea salt. Mix well with a spoon and set aside
🐟 Then prepare the fillets with a tsp of Jida Smokin’ Red Blend and a tbs of olive oil in a small bowl. Mix well and using a pastry brush, brush the fillets all over with the seasoned oil (just a light brushing… don’t drown them!). Heat a little oil in a non stick frying pan and fry the fillets over a moderate heat for a minute flesh down and then turn over and cook for a few more minutes for a nice crispy skin
🐟 Finally, transfer the fillets to a serving plate/individual plates, spoon over the salsa and serve with some new potatoes and some asparagus or samphire would be nice with it too
