Zesty Mediterranean Pockets πŸƒπŸ‘©β€πŸ³πŸ₯Ÿ

You will need:

**Green Sauce**
40 grams of oregano
40 grams of mint
2 cloves of garlic
5 tablespoons of olive oil
1/2 tsp of salt
1 tsp of black pepper
Juice from 1 limeΒ 
1 small avocadoΒ 
All tossed into a blender until creamy

**Side kicks**
2 to 3 medium size potatoes
2 small courgettes
Topped with olive oil, salt, smoked paprika and thyme
Baked at 200C until crispy

**Toppings**
10 cherry tomatoes, cut in quarters, mixed with half a lime juice, olive oil, and salt and black pepper

**The main act**
2 chicken breasts thinly cut and marinated with half a lime, pinch of salt and a touch of cumin, smoked paprika and black pepper. Cooked with one tablespoon of olive oil until crispy.

**Extra**
A tub of labne

**Assembly**
Cut your pitas in half and on each side, half a tbs of labne and half a tbs of the green sauce. Add in as much chicken, and potatoes and courgette fries as you'd like, top with the tomato mix and a little more of the green sauce.

I was inspired by 's Spanakopita melt and woke up dreaming of a grilled cheese sandwich! 🍞 Introducing my no-so-healthy but oh-so-delicious creamy spinach & egg grilled cheese
topped with smoked paprika & honey 🍯

Creamy spinach: 4 cups of spinach, 1/4 cup of grated parmesan, 1/3 cup of crumbled feta, 1 tsp of black pepper, all tossed in a pan with 2 tsp of butter and cooked until all the cheese melt and the mixture becomes creamy.

Scramble some eggs on the side and assemble your sandwich by combining 2 tbs of the creamy spinach mix with 2 tbs of scrambled eggs. I put olive oil on the sides of the bread and cooked in the pan to get it all crispy but butter is also a great option! Once the sandwich was all crispy, I drizzled it with honey and sprinkled some smoked paprika 🌢️

Cooking is the art of infinite possibilities that come to life through the harmony of flavours that you sometimes least expect to work well together. Since moving to London, I grew very fond of who has transformed some of my favourite dishes into something entirely new and exciting with ingredients that I would have never thought of combining in a million years.

Grilled eggplant topped with garlic yogurt was a staple in my household growing up and now I can't wait to share this new recipe of it with my family :)

The dinner table has always been a sacred place for me - a place for gathering with loved ones and building memories over delicious dishes that we prepared together and the experience of it all that we look back on for many years to come. This shot is from this past July and from a dinner table my family and I put together right as the summer Sun was setting over the beautiful Aegean Sea in the coastal town of . You can see the golden rays of light reflecting on that crisp glass of Rose, paired with a seasonal salad of Purslane, tomatoes, sumac, and red onions soaked in olive oil, lemon juice and pomegranate molasses + a homemade Cacik - a summer classic ( a cold yogurt soup made with shredded cucumbers, lots of mint and dill). Five large Sea Bass are cooking in the grill and the neighbourhood cats are all gathered around our table for a bit. A memory so warm and delicious that one instantly knows...a dinner table is thing of magic.

πŸƒ Perfect Summer Lunch under 15 mins πŸƒ Cumin Lentils with fried egg🌱

What you'll need:

1 cup of cooked green lentils
5 baby carrots, thinly sliced
1 cup of string beans, chopped in 1/3rds
1 shallot, finely chopped
2 cloves of garlic, shredded
1 tbs of cumin
1 tsp of salt
1 tsp of black pepper
1 tsp of cayenne pepper (optional)
Olive Oil
1 egg
Basil & Parmesan (optional)

What you'll do:

Toss in the garlic, shallots, carrots to a pan with 2 tbs of olive oil. Add in the cumin, salt, black pepper and cayenne. Give it two mins and add in the string beans. Cook until carrots soften.

Stir in the lentils. Cook for 5 mins.

On the side, fry one egg on a pan.

Pour the cumin lentils into a bowl and put the fried egg on top. Garnish with parmesan and fresh basil.

Super light & delicious charred eggplant salad πŸ† All you need is below:

2 large eggplants
3 cloves of garlic, shredded
3 tbs of olive oil
1 tsp of salt
4 tbs of lemon juice
1/4 cup of chopped parsley

&

Mix it all in! Serve cold.

What you'll need:

- 2 zucchini
- 1 carrot - 2 eggs
- 3/4 cup of flour
- Dill
- 1 tsp of paprika
- 1 tsp of black pepper
- 1 1/2 tsp of salt β €β €β €β €β €β €β €β €β €
Super easy instructions: β €β €β €β €β €β €β €β €β €
- Grate the two zucchini and the carrot into a large bowl. β €β €β €β €β €β €β €β €β €
- Add in the dill, eggs, and spices. Mix until the eggs are fully blended in. Add in the flour and whisk until you get a creamy batter. β €β €β €β €β €β €β €β €β €
- Heat up 2 tbs of vegetable oil on a pan. Scoop a 1/4 cup of batter and place it on the heated pan.

Taze Fasulye ( a traditional Turkish dish made with tomatoes and string beans) has always been my favorite go-to lunch during hot summer days! It is very easy and quick to make, loaded with nutrients and feels light! This time I added eggplants to the mix and it was oh so delicious!! β €β €β €β €β €β €β €β €β €
Here are all the ingredients you need: β €β €β €β €β €β €β €β €β €
β €β €β €β €β €β €β €β €β €
1 Ibs of string beans
2 medium size eggplants
1 large onion
2-3 cloves of garlic
1/3 cup of olive oil
2 tbs of tomato paste
1 large can of San Marzano tomatoes
1 tsp of paprika
1 tsp of sugar
2 tsp of salt β €β €β €β €β €β €β €β €β €
β €β €β €β €β €β €β €β €β €
How to make Taze Fasulye: β €β €β €β €β €β €
β €β €β €
Chop the onion in small cubes and toss it in a deep cooking pot with the olive oil, tomato paste and shredded garlic. Cook until the onions turn transparent. β €
β €β €β €β €β €β €β €β €
Toss in the can of tomatoes, salt, paprika and sugar. Cook for 5 mins. β €β €β €β €
β €β €β €β €β €
Chop the eggplants either in small cubes or thin slices and toss into the tomato mix. Add in the string beans. Give it a nice stir and close the lid of the pot. Put the heat to low. β €β €β €β €β €β €β €β €β €
Cook for 30-40mins until the eggplants and the beans soften. β €β €β €β €β €β €β €β €β €

Once it's cooked, pour the dish into a glass or ceramic serving dish and let it cool for 30 mins. β €β €β €β €β €β €β €β €β €

Turkish people love eating this dish with a side of full fat plain Greek yogurt! Trust me, try it!
