Minimal washing up, quick to make, and in the case of these Tomato Basil Baked Gnocchi preps by , filling and tasty too! 😋

Sometimes the idea of a long prep can put you off even starting (and that’s when the easier alternatives like buying pre-packaged lunches starts to look enticing). For days when you have low energy, but don’t want to cheat on your nutrition goals, these sorts of preps are gold dust! 💛

“Tomato basil baked gnocchi (makes 4)

Ingredients

- 16 oz pack shelf-stable or refrigerated gnocchi

- 25 oz jar tomato basil pasta sauce

- 1 1/3 cups shredded rotisserie chicken breast

- 1/4 cup shredded mozzarella (dairy-free or regular)

- fresh basil to garnish

- 1 tbsp Italian seasoning

Instructions

1. Preheat oven to 350F.

2. Spray meal prep containers or baking dish with cooking spray.

3. Divide gnocchi and shredded chicken evenly between containers.

4. Add Italian seasoning and pasta sauce to each container and stir to combine.

5. Top each with mozzarella, then wipe off any extra sauce on sides of containers before baking.

6. Bake for 20-30 minutes, let cool before covering with lids.

7. Store in fridge up to 5 days or freezer for up to 3 months, and reheat in microwave.”

Hot Honey Halloumi With Sweet Potatoes & Couscous, by (Check her out for more wonderful preps!). 😍

Quick, healthy, tasty, and cheap to make, this delicious little prep works just as well with either halloumi or chicken, and is extremely simple to put together. 🧑🏻‍🍳

I think we are going to have to try this out later in the week, at Igluu HQ! 😋

“this week we have hot honey halloumi with sweet potatoes, couscous, pickled red onion and cucumber 🤤🤤

this could be one of my faves

Ingredients:

• halloumi

• couscous

• sweet potatoes

• cucumber

• pickled red onion

• fresh parsley

• honey

• olive oil

• lemon

• smoked paprika

1. Wash and chop your sweet potatoes into cubes and then season with olive oil, smoked paprika and cook in the airfryer around 25 minutes

2. For the couscous, cook as per instructed on the packet and se aside to cool down whilst the sweet potatoes cook

3. Cook the halloumi in a pan and drizzle over some honey and sweet chilli flakes

4. Once the sweet potatoes are cooked and the couscous has cooked and cooled down, add this to your lunch containers along with the halloumi ( could also swap this for chicken if you want more protein), some pickled red onion, cucumber and sprinkle of fresh parsley

5. For the sauce I just added some olive oil, squeeze of lemon, honey and pepper to a bowl which I will place in a pot and drizzle over my lunches when I eat them

“Ingredients (for 3 portions)

-210 g pasta (uncooked)
-approx. 300 g broccoli (fresh or frozen)
-400 g chicken breast
-1 tsp olive oil
-Seasonings to taste

For the sauce:

-20 g butter
-1 onion
-2 cloves of garlic

Paprika

-200 ml low-fat milk
-100 g light cream cheese
-40 g light grated cheese
-20 g Grana Padano (grated)
-Salt & pepper
-A little erythritol / sugar alternative (optional)
-Parsley

Preparation

Cook the pasta and divide it among 3 meal prep containers. Cook the broccoli and divide it equally as well. Marinate the chicken with olive oil & seasonings, then cook in the air fryer at 200°C for about 12 minutes (flipping halfway through). Slice the chicken once done. Melt the butter in a pan, then sauté the onion & garlic. Add the paprika and deglaze with the milk. Stir in the cream cheese, grated cheese, and Grana Padano. Season to taste with additional spices, erythritol, and parsley. Pour the sauce over the pasta & broccoli, and distribute the chicken on top.

Bang Bang Prawn Noodles, by . 😍

A great prep to enjoy in the last days of summer!

This dish is just as tasty when served cold, and therefore a wonderful idea for those lunches where you aren’t sure you will be near a microwave when hunger strikes.

Quick to make, a wonderful variety of flavours, and plenty of protein. The perfect prep to enjoy whilst coming to terms with the end of a very hot summer! 🥵

250g Uncooked Prawns

Monday’s meal prep done with an Oven Baked Chicken and Broccoli Mushroom Stir-fry for Tuesday 😋 You can also make it a one-tray oven-baked meal too by having the mushrooms and broccoli with the chicken together!

“Oven Baked Chicken:

• 3 boneless chicken thighs

• 2 tsp minced garlic

• 2 tsp olive oil

• 2 tsp light soy sauce

• 2 tsp roast chicken powder

• 1/2 tsp parsley

• 1/2 tsp thyme

• 1 tsp paprika

• 1/2 tsp salt

• 1 tsp black pepper

Marinade chicken for min 30 mins and preheat oven to 200°C (400°F). Bake chicken for 25 mins skin side down, then flip to skin side up and bake for another 10-15 mins until the skin is crispy.”

“Per serve:

Ingredients (serves 4):

- 1/2 brown onion

- 2 garlic cloves

- 1 carrot

- 500g extra lean beef mince

- 500ml passata

- 2 beef stock cubes

- 115g lasagna (8 sheets) (I used gluten free)

- 500g blended cottage cheese

- 30g mozzarella 

Method

- Fry up your onion and garlic, brown your mince then add the stock and passata

- Blend your cottage cheese

- Then in 4 glass containers layer your beef mince, lasagna sheet, cottage cheese then repeat and top with mozzarella

- Bake in the oven for 35 minutes or until golden and bubbling at 180C”

“Chicken Parma Glass Bowl Meal Prep 🍽️

(Don’t fight me on the name, i’m from VIC)

Lunch meal prep that actually tastes like a pub classic, with simple steps!

Macros per serve (serves 4):

446 cal | 46.1g protein | 19.5g fat | 19.1g carbs

Ingredients:

* Chicken breast, boneless skinless 500g

* Short cut wood smoked bacon 200g

* Spud Lite potato 290g

* Panko breadcrumbs 40g

* Light tasty shredded cheese 80g

* Shredded parmesan 40g

* Mutti Sugo Napolitana 400g (you could substitute for pastas and add more if you desire)

* Ground Italian herbs- roughly 1 tsp

Method:

1. Chop the chicken, bacon and spud lite potatoes into tiny pieces.

2. Divide ingredients between four glass bowls.

3. Top with Napoletana sauce and mix well, then flatten the top.

4. Sprinkle breadcrumbs over the top.

5. Layer with tasty cheese, parmesan, then Italian herbs.

6. Cover with foil and bake at 180° for 50 minutes.

7. Remove foil and cook another 10 minutes, last 5 on grill setting to brown the top if you wish. Serve and enjoy

“This Mongolian beef is one of the easiest weeknight dinners you’ll ever make!! High protein & so good for meal prep 🤤🍚🥒

Ingredients:

1/2 tbsp olive oil

500g lean beef mince (or beef strips)

1/2 tbsp garlic, minced

1/2 tbsp ginger, minced

3 cups cooked rice

1-2 cucumbers, sliced

1/4 cup spring onion

Sauce:

1 cup chicken stock

1 heaped tbsp corn flour

1/4 cup soy sauce

1/4 cup honey or brown sugar

2 tbsp Chinese cooking w**e (can omit)

Method:

1. Add olive oil to a fry pan over medium high heat.

2. Add the beef mince, break it up with a spatula and cook untouched for 5 minutes (this will help it to brown and get crispy).

3. Flip the mince and cook for another 1-2 minutes, then mix in the garlic and ginger.

4. Combine the corn flour and stock together in a bowl until dissolved. Then mix in the soy sauce, honey and cooking w**e.

5. Add the sauce to the pan and simmer over medium heat until it thickens, stirring regularly.

6. Serve with steamed rice, cucumber and garnish with spring onion/sesame seeds.

Mexican Street Corn Chicken, by . 😍

A gorgeous meal prep that is absolutely packed with protein and flavour.

This is the sort of meal prep that tastes so good you feel like you are treating yourself rather than sticking to your nutritional goals.

It is also yet another meal prep that you can mess around with the ratios to suit your particular needs.

“Macros Per Serving (6 Total)

Ingredients (serves 6)

Mexican Grilled Chicken

- 1300g Raw Boneless Chicken Thighs, fat trimmed

- 2.5 Tsp Salt

- 4 Tsp Paprika

- 2.5 Tsp Cumin

- 4 Tsp Garlic Powder

- 3 Tsp Onion Powder

- 4 Tsp Oregano

- 1.5 Tsp Chilli Powder

- 6 Tsp (30g) Olive Oil

Creamy Street Corn Salad

- 600g Canned Sweet Corn, drained

- 200g Red Onion, chopped

- 2 Tsp Garlic Powder

- 2 Tsp Paprika

- 150g Red Bell Pepper, chopped

- 80-100g Jalapeño, chopped

- 300g Low Fat Yogurt

- 100g Light Mayo

- 70-100g Low Fat Feta Cheese

- 2 Tbsp Fresh Coriander/Cilantro, finely chopped

- 2-3 Tsp Tajin Seasoning

Coriander Lime Rice

- 250g Uncooked Basmati Rice

- Big Handful Coriander, finely chopped

- Squeeze of Lime Juice

- Pinch of Salt to taste

👨‍🍳Cooking Instructions

1. Trim excess fat from boneless chicken thighs. Add to bowl with Mexican seasoning, lime juice and olive oil. Mix well to marinate.

2. Add washed uncooked rice to a pot of water, bring to a boil then simmer on low heat until fully cooked. Once cooked, let it cool, add chopped corianderwith lime juice and pinch of salt. Mix well then set aside.

3. Get a large lined sheet pan, spread marinated chicken evenly then oven bake for 23 mins at 200C/390F and broil for 5-6 mins until golden brown, charred and juicy.

4. Remove chicken from pan, add sweetcorn, red onion, garlic powder and paprika. Mix in all the chicken juices then flatten evenly. Oven roast for just 15 mins until crispy.

5. Add roasted corn to a large mixing bowl, with all listed ingredients then mix well until creamy and delicious.

6. Chop the chicken into cubes, serve with cilantro lime rice and street corn salad and ENJOY!”
