🥛 **The Ingredients:**
* 1L Whole milk (Do *not* use Ultra-Pasteurized/UHT)
* 2 tbsp Apple cider vinegar or lemon juice
* A pinch of salt
🔥 **The Easy 3-Step Process:**
1️⃣ **Heat It:** Bring milk and salt just to a simmer. Look for steam and tiny edge bubbles, but don’t boil!
2️⃣ **Break It:** Turn off heat, gently stir in the vinegar with a spoon (no whisks!), and let it sit for 10 minutes. Watch the fluffy white curds separate from the liquid!
3️⃣ **Strain It:** Scoop curds into a cloth-lined strainer. Drain 5–10 mins for creamy cheese, or longer if you want it firm.
