SHEETPAN KEBABS MY WAY 🌯

I’ve been seeing sheetpan kebabs + kofte everywhere. And honestly, they look delicious. Luckily, if you don’t eat meat like me, you don’t have to miss out 🤤

AD This is the way I like to make them, cooked on my Woodfire ProConnect. The kebabs get that classic smoky-charred flavour, then with the bigger grill plate you can do your tomatoes + flatbread at the same time!

Served with an irresistibly indulgent harissa tahini sauce, sumac onions + pickles. Honestly, it might not be a classic kofte, but as far as a meatless version goes, it really is DELICIOUS. Full recipe below - please give this one a go!

INGREDIENTS (serves 4-6)

1 white onion, grated
1 sweet red pepper, finely chopped
4 garlic cloves, minced
3 tbsp tomato purée
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp smoked paprika
½ tsp (kashmiri) chilli powder
2 tbsp dark soy sauce
500g firm tofu (I like ½ smoked, ½ normal), patted dry + crumbled
150g cooked brown lentils, mashed
6 tbsp chickpea flour
6-8 tbsp olive oil, for grilling
2 large tomatoes, chopped into quarters
Salt and pepper

6 tbsp runny tahini
1 tbsp harissa paste
1 lemon, juiced
1 garlic clove, minced

1 red onion, finely sliced
Large handful fresh parsley, leaves finely chopped
2 tbsp sumac
1 lemon, juiced
1 tbsp olive oil
Flatbreads + pickles of choice

the main reason I stopped eating meat was because I loved animals. and what said the other day really resonated with me - it's so strange that many of us say we love animals, yet continue to eat meat.

we love our pets. we love wild animals. we say we love creatures like cows, chickens & pigs. but if they end up on our plates, I'm not sure it adds up.

it is not just a tasty steak, a piece of fried chicken, pork belly or lamb chop. unfortunately, they were living beings that were killed by us. for what? 10 minutes of pleasure? these animals feel pain & fear in the same way we do. I'm also pretty sure - if they could choose - they'd rather not be killed?

unfortunately they don't have a choice. but we do! there are so many amazing alternatives to meat. following a more plant-based, vegan, vegetarian - whatever diet you feel comfortable with - is a great place to start.

you don't have to be the perfect vegan - I'm certainly not - but we should all be aware of what it is that we're actually buying, cooking & eating. if you are in a position to make a choice, make the right one.

so next time you're going to order a steak, or buy some chicken - just make sure you remember the cow and living beings they once were 🙏

🧄 WILD GARLIC RIGATONI 🍃

wild garlic season is almost over - so why not grab a bunch while you can & make this super simple pasta sauce 🤤

creamy, fresh & packed with flavour (and a good amount of plant protein too - from the silken tofu) - you really don’t need many ingredients to make a spring pasta dish as good as this 👨🏻‍🍳

meals I ACTUALLY make for my lunch & dinner during the week 👨🏻‍🍳

1. chilli peanut ramen with crispy tofu + greens 🍜

2. miso butter beans with smoky tofu + pickled onions 🫘

3. sweet potato + tofu tikka masala 🍛

4. speedy provençal stew with pan-fried tofu 🍅

5. meze spread with gigantes plaki, crispy oregano potatoes & greek salad 🇬🇷

6. cannellini bean purée, tahini fennel slaw + chilli tofu 😍

7. creamy sausage orecchiette with cavolo nero 🍃

8. leftovers lunch bowl - sweet potato, tomatoey beans, spring onion + pea salad 🫛

9. one pot chickpea + lentil dal with toasted pumpkin seeds 🇮🇳

10. roasted veg + chickpea rice bowl with avocado + stir-fried romanesco 🍚🥑

these are the sorts of dishes I end up eating on weekdays. whether it’s a fridge-raid lunch, or speedy dinner, I never really want to spend much longer than 30 minutes cooking - and I know that’s the case for a lot of us ⏳

I don’t really have a set formula when it comes to midweek meals, but there are a few things I always keep in mind…

nutrition-wise, I like knowing I’ve got my protein (big into my tofu atm), fibre (beans + chickpeas always), a mix of cooked veg + salad for all those plant points. then a dressing or sauce of some description - which nearly always involves tahini 🤤

when it comes to texture + flavour, contrast is key. assemble a meal that’s got a little bit of everything. creamy or soft with something crunchy. savoury or salty with a dressing that’s a little more acidic, zingy + sweet ⚖️

most of these meals are based around leftovers + ingredients I’ve already got at home. some of it might look fancy, but really they’re all very simple + what I end up eating midweek 🌱

SPEEDY GARLIC, TOMATO & OLIVE PASTA 🍝 with griddled asparagus

If you need dinner on the table in 20 minutes tonight, but still want a meal that’s packed full of flavour, I’ve got a very special pasta dish for you 🤤

AD | This is my garlicky tomato & olive spaghetti. And we’re using the best tomato products out there - polpa (tinned chopped tomatoes) & double concentrate (tomato purée) 🥫

The polpa is perfect seeing as this is a slightly lighter, quick-cook sauce. The concentrate adds the BEST hit of savoury-sweet depth. Adding lemon zest & basil makes the sauce sing of springtime flavours, before finishing the dish off with juicy spears of seasonal British asparagus 🌞
