🥘 Homemade Matar Paneer: Simple, Creamy & Delicious! 🥘

Looking for the perfect comfort meal? This Matar Paneer is packed with flavor and so easy to make at home. Serve it with hot rotis, naan, or jeera rice for a restaurant-style experience! 😋✨

🛒 Ingredients:

Paneer: 200g (cubed)
Green Peas: 1 cup
Onion: 1 medium (chopped)
Tomatoes: 2 medium (chopped)
Ginger-Garlic Paste: 1 ½ tablespoons
Green Chillies: 2
Cumin Seeds: 1 teaspoon
Red Chilli Powder: 2 teaspoons
Coriander Powder: 2 teaspoons
Turmeric Powder: ½ teaspoon
Garam Masala: 1 teaspoon
Oil: 3 tablespoons (divided)
Salt: To taste
Water: 1 cup
Fresh Coriander Leaves: For garnish

👩‍🍳 Method:

Step 1: Prepare the Base Paste
Heat a pan and add 1 tbsp of oil.
Add the chopped onions and sauté until they become translucent.
Stir in the ginger-garlic paste and cook until the raw fragrance disappears.
Add the tomatoes and salt. Cover and cook for 2–3 minutes until the tomatoes are tender.
Add the green chillies and sauté for another minute.
Remove from heat, let it cool slightly, and blend into a smooth paste.

Step 2: Cook the Gravy
In the same pan, heat the remaining 1 ½ tbsp of oil.
Add cumin seeds. Once they pop, add red chilli powder and your prepared onion-tomato paste. Mix well.
Add coriander powder and turmeric.
Cover and cook on low heat until the oil begins to separate from the sides.

Step 3: Simmer and Serve
Add the paneer slices and green peas. Stir gently to coat them in the masala.
Pour in 1 cup of water, mix well, and cover. Cook for about 5 minutes on low heat.
Check salt and add more if needed.
Finally, sprinkle garam masala and fresh coriander leaves.
Give it one last mix, turn off the heat, and your Matar Paneer is ready! 🍲

☁️ HOMEMADE MARSHMALLOW RECIPE ☁️
Save this for your next s’mores night! So much better than store-bought. ✨

Ingredients:

Gelatine: 30g
Sugar: 250g
Hot Water: 120ml (for blooming)
Normal Water: 120ml (for syrup)
Flavor: 1 tsp Vanilla Essence
Dusting: Corn flour (or a mix of corn flour & powdered sugar)

Method:

Bloom: Mix 30g gelatine with 120ml hot water. Stir well and let it rest for 10 mins.
Syrup: Combine sugar and 120ml water in a pan over high heat. Once the mixture thickens and reaches a syrup-like consistency, lower the heat.
Combine: Add the bloomed gelatine to the syrup. Stir on low heat until it starts dripping slowly from your spoon (thread consistency).
Cool: Transfer to a heat-tolerant bowl and let sit for 2 minutes.
Whip: Whip at high speed for about 5 minutes until thick and fluffy. Add your vanilla essence during the last minute of whipping.
Set: Quickly transfer to a pre-greased pan. Let it set at room temperature for 4 hours.
Finish: Dust with corn flour, cut into squares, and enjoy! 🍬✨
Tip: Lightly oil your knife or scissors before cutting to prevent sticking!

🍫 Rich, Chocolaty & Soft Chocolate Cake 🍰

Freshly baked, rich, and soft chocolate cake layered with creamy chocolate buttercream and silky ganache 😍🍰 Every bite is a chocolate dream! Try this recipe and make your day extra sweet. 💕

🧁 Ingredients

For the Cake:

4 large or 5 medium eggs (250g without shells)
250g cake flour or all-purpose flour
40g cocoa powder
250g butter
2 tsp baking powder
½ tsp baking soda
½ cup milk
2 tsp white vinegar or lime juice
2 tsp vanilla essence
2 tsp coffee (1 tsp coffee + 2 tsp hot water)

For Chocolate Ganache:

200g cooking chocolate
100ml fresh milk or double cream
1 tbsp butter

For Chocolate Buttercream:

150g butter (room temperature)
250g icing sugar (sifted)
2 tsp coffee (½ tsp coffee + 2 tsp hot water)
2 tsp fresh milk
60g cooking chocolate (melted)

👩‍🍳 Method

Prepare the pan:
Line an 8-inch round baking tin with parchment paper. Preheat oven to 160°C (140°C fan).

Dry ingredients:
Sift together flour, cocoa powder, baking powder, and baking soda three times. Cover and set aside.

Wet ingredients:
Separate egg yolks and whites. In a bowl, beat butter for 2 minutes until it changes colour.
Add sugar and beat for 5–8 minutes until creamy and fluffy.
Add egg yolks one by one, beating lightly after each addition. Mix in vanilla.

Make buttermilk:
Add vinegar or lime juice to the milk and let it sit for 5 minutes.

Whip egg whites:
In a separate bowl, beat egg whites until stiff peaks form.

Combine:
Add ⅓ of the flour mixture to the butter mixture and fold in gently.
Add ½ of the milk and coffee mixture. Repeat the process, alternating flour and milk mixtures.
Finally, fold in the beaten egg whites in three parts until smooth.
Beat on low speed for 20 seconds to finish.

Bake:
Pour the batter into the prepared tin.
Bake for 50–60 minutes or until a toothpick inserted in the centre comes out clean.
Cool the cake completely before frosting.

🍫 Chocolate Ganache:

Microwave butter and milk for 30–50 seconds. Add chopped chocolate and stir until smooth.
Let it cool before using.

☕ Chocolate Buttercream:

Beat butter until pale and creamy.
Gradually add sifted icing sugar in three batches and beat well.
Mix in melted chocolate, then add coffee and milk.
Beat until smooth and fluffy.

🎂 Assemble the Cake:

Slice the cooled cake into two layers.
Spread a thick layer of buttercream between the layers.
Cover the entire cake with the remaining buttercream.
Pour ganache over the top and let it drip down the sides.
Keep 30 minutes in the fridge before serving.
