These are the grains I keep in my pantry. They have different levels of nutritional value. I'm a Filipino but jasmine rice is not on my list. I know! We are one of the biggest rice eaters in Asia. I love rice, but I always prefer something that will give me lots fibre because of my gut issues. My gut issues also taught me how to choose good organic flours and make sourdough breads. The less refined for me the better.

On our way to the last assessment for my level 2 course is making fresh filled pasta. I'm actually thinking to make black pasta. Luckily I have a squid ink in my pantry so I mixed it in and it looks fab. Not sure what to fill with this but I will do something easy. Tagliatelle!

Mushroom and leek risotto. Savoury, creamy with flavour of parmesan cheese. Absolutely delicious! BUT there's something missing which is truffle oil. Still delicious and flavourfull without.

Back to sourdough baking and these are my breads today. Ciabatta and Mini Baguette. I used Cali, my San Francisco starter for my levain. Not sure what's the difference from our normal sourdough starter but if you have any idea pls let me know. 😁 It's crusty and fluffy inside. Wish I have pastrami today and mozarella slices.

Nothing beats the smell of freshly baked bread. That's the crumb of my 75% hydration sourdough bread made up of 50% white 40% wholemeal and 10% dark rye flour. No cold re**rd involved as I baked it the same day. So soft with a bit of nutty flavour. #

Recipe:
375 ml Warm water
150g Active sourdough starter

250g Strong white flour
200g Wholewheat flour
50g Dark rye flour
10g Fine salt
30ml. Olive oil

Today is something British. Making up from not so good last week. I ordered mixed grill but instead with chips I changed it to mediterranean roasted vegetable salad. It's perfect! These past few days were really depressing for me, it's mixed of everything. Changing career at 43 can be daunting. But today I was beaming, felt motivated as I received 2 good news this morning. Nothing but thankful I know I worked hard for it. If not because of my supportive culinary tutor I already left college. He pushed me to this opportunity, a new step in culinary world.

It was a lovely Friday hitting 2 golds in our culinary class. Our practice for Chicken Ballotine with fondant potato and our actual test for Paris Brest. Chicken ballotine reminds me of Filipino dishes Morcon and hamonado, they are rolled meat with filling. I am thinking to fill my page with different dishes as well and not only desserts. That's gonna be exciting but the only problem is me and my lazyness to edit photos and videos. But I'll try my best to share you what I make in our class and at home to create a good
