Today’s little bakery moment made my day! 🎃🍪❤️

I put outside a small chalkboard saying what was available today. (Only my new Halloween cookie). A boy came along and bought one. Five minutes later, he came back with his friend and asked me for the recipe! 😂
I explained that they’re sourdough-based, so they’re a little different from the usual chocolate cookies he might be used to. He looked at me and said:

“That’s the BEST cookie I’ve ever eaten!” 😍

His friend tried one too and proudly announced that I make “the best cook” — not baker, cook! 😂😂 I’ll take it! 👩‍🍳❤️
So there I was, giving a mini lesson on what sourdough is, why it can be easier on the gut, and why these cookies have that slightly different, delicious flavour.

They left, and I stood there thinking… THIS is why I love what I do. 🥹

At the moment, these little moments are honestly the best part of my bakery journey. When someone genuinely appreciates something you’ve made with your own hands — especially when they come back five minutes later for the recipe — it’s pretty special. ❤️
And apparently, I’m not just a baker anymore… I’m officially the best cook in the neighbourhood. 😂🎃🍪

Sometimes we just need a little inspiration for what to put between two slices of really good bread… 😍 So I put together 15 healthy and delicious sourdough sandwich ideas ; from classic chicken & salad and avocado & egg, to hummus & roasted vegetables, chicken Caesar and even a sweet PB & banana option. 🥑🥚🍗🌱

And because I know many of you are trying to make healthier choices, I’ve included approximate calories and protein for each idea too.
The best part? You don’t need complicated ingredients.

☕️ A little bit of news from Hollowbread Bakery ♥️

I have a little bit of news to share with you… from Wednesday, I’m officially becoming a barista (firstly: student)!☕️🙈🙃

I’m very excited to start my new part-time job at Costa in Hedge End and begin a new chapter in my life. Serving people, making them feel welcome and giving good hospitality have always been some of my strengths, so I’m really looking forward to learning something completely new; and finally finding out what all those buttons on the coffee machine actually do! 😂

But don’t worry… Hollowbread Bakery is definitely NOT going anywhere! 🍞❤️

I’m still baking because it’s my passion, but now I’ll need to become much better at organising my time. This is going to be a bit of a learning curve for me, so collection times will need to be rescheduled around my new working hours.
I’m kindly asking for your patience while I find the right balance between my new coffee adventure and my favourite job: baking for you. 🥰
So, if you’re planning to enjoy some of my homemade goodness, please plan ahead and place your orders through the Hollowbread website whenever possible. This will help me organise my baking days, prepare everything properly and make sure I can continue giving you the bread and treats you love.

A new job, a new skill, a little more juggling… and still plenty of sourdough! 😅🍞☕

💤 Sleeping beauties… but they’re still working! 🍞✨

Meet my little sourdough sleeping beauties! 🥰 They’ve been shaped, tucked into their baskets and now they’re having a long, cold night in the fridge.
And yes, PETi, my trusty sourdough starter is behind all this magic. ♥️

This is called cold fermentation. Instead of rushing the dough, I let it slowly ferment in the fridge, where the cooler temperature puts the yeast into slow-motion mode. 💤

While PETi and his little helpers are taking their time, the dough develops:

✨ more complex, deeper flavour
✨ better aroma
✨ a lovely chewy texture
✨ a beautiful crust when baked

Basically, slow food at its best. The dough gets a good night’s sleep, and in the morning I wake it up with a very hot oven! 🔥
So if you see me leaving baskets of dough in the fridge overnight, I’m not being lazy… I’m letting PETi do the hard work! 😂♥️

Real bread. Real ingredients. Time, patience & a little help from PETi.
