🤠 Cowboy Soup 🥣
This hearty cowboy soup is packed with lean ground beef, flavorful seasonings, and a mix of delicious vegetables. Perfect for a cozy night in or a gathering with friends!
Ingredients:
- 1 pound of lean ground beef 95%
- ½ tablespoon chili powder
- ½ tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 15- oz can of seasoned pinto beans* like ranch beans or seasoned chili beans
- 1 10- oz can of diced tomatoes with green chile pepper* like Ro-tel
- 2 russet potatoes peeled, diced 1”
- 8 oz frozen mixed vegetables
- 8 oz frozen whole-kernel corn
- 3-4 cups beef broth
Directions:
1. Add ground beef, chili powder, cumin, garlic powder, and onion powder to an 8qt dutch oven or pot over medium-high heat. Cook until the meat has browned.
2. Once the meat has browned, add the remaining ingredients to the pot and turn the heat to high. You want the broth to cover the potatoes mostly. If half an inch is sticking out, that's okay.
3. Bring the soup to a boil, then reduce to a simmer and cover. Cook for 20 minutes or until the potatoes have cooked through.
4. Salt and pepper to taste.
Notes:
- Add liquid from the cans to the pot.

1 cup heavy cream
1 cup chicken broth

Pickled Beets
Ingredients
8 medium fresh beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1/2 teaspoon salt
Directions
Scrub beets and trim tops to 1 in. Place in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 25-30 minutes or until tender. Remove from water; cool. Peel beets and slice; place in a bowl and set aside.
In a small saucepan, combine vinegar, sugar, cloves, allspice and salt. Bring to a boil; boil 5 minutes. Pour over beets. Refrigerate at least 1 hour. Drain before serving.

Country Ranch Green Beans 'n Potatoes with Bacon 🥔🥓🍽️

Ingredients:
1 pound fresh green beans, trimmed 🥒
1 ½ pounds baby potatoes (red or Yukon gold), halved or quartered 🥔
6 slices bacon, cooked and crumbled 🥓
1 packet ranch seasoning mix 🌿
3 tablespoons butter, melted 🧈
2 cloves garlic, minced 🧄
Salt and pepper to taste 🧂
Fresh parsley, chopped (for garnish) 🌿

Instructions:
Cook the Potatoes:
In a large pot, bring salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until they are tender when pierced with a fork. Drain and set aside. 🥔💧

Cook the Green Beans:
In the same pot, bring water to a boil and cook the green beans for 5-7 minutes, until tender-crisp. Drain and set aside. 🥒
Cook the Bacon:

While the veggies are cooking, fry the bacon in a skillet until crispy. Remove the bacon and crumble it. Reserve 1 tablespoon of the bacon grease in the skillet. 🥓🔥

Make the Ranch Butter:
In a small bowl, whisk together the melted butter, ranch seasoning, and minced garlic. 🧈🧄🌿

Combine Everything:
In the skillet with the reserved bacon grease, toss the cooked potatoes, green beans, and crumbled bacon. Pour the ranch butter mixture over everything and gently toss to coat. 🥔🥒🥓

Serve:
Season with salt and pepper to taste. Garnish with fresh parsley and serve warm. 🌿🍽️

Cheesy Pesto Chicken Roll-Ups 🍅🐓🌿

Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup basil pesto
- 1 cup mozzarella cheese, shredded
- 1 cup cherry tomatoes, halved
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Fresh parsley or basil for garnish

Directions:

1. Preheat Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

2. Prepare the Chicken:
- Slice each chicken breast horizontally to create thin fillets, or pound them to an even thickness. Season both sides with garlic powder, Italian seasoning, salt, and pepper.

3. Assemble the Roll-Ups:
- Spread a thin layer of pesto over one side of each chicken fillet. Sprinkle mozzarella cheese evenly and top with cherry tomato halves.
- Roll each chicken fillet tightly and secure with toothpicks if needed.

4. Sear the Chicken:
- Heat olive oil in a skillet over medium heat. Sear the chicken roll-ups for 2-3 minutes on each side until golden brown.

Air fryer beef jerky is the best way to make beef jerky at home
Ingredients
1 lb thinly sliced beef steak (sirloin steak, round steak) [Note 1]
½ cup Worcestershire sauce
½ cup soy sauce
1 tbsp honey
1 tsp onion powder
½ tsp chili flakes, optional, or add more for spicy jerky
Instructions
1. Mix all the marinade ingredients together in a bowl.
2. Cut beef slices into strips or squares.
3. Add the beef strips to the marinade, ensure that all surfaces of the beef are covered by the marinade.
4. Cover the bowl and place in the refrigerator overnight or for at least 3 hours.
5. Remove beef from marinade and pat dry with paper towels.
6. Place beef strips in air fryer basket in a single layer – ensure it is not overlapping.
7. Air fry beef strips until completely dehydrated. Set to air fry at 210°F (100°C) for two hours, then check the jerky. If it is not completely dried out continue to air fry for 15-20 minute intervals until it is ready. It needs to reach 160°F/71°C [Note 2].
8. When the jerky is ready, allow to cool and store in an air tight container.
