Pumpkin Pecan Spice Loaf 🍂
Ingredients:
- 1 ¾ cups all-purpose flour
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ cup chopped pecans
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp maple syrup
- 1-2 tbsp milk
- Extra pecans for topping
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
2. In a large bowl, mix pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
3. In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
4. Combine the dry ingredients with the wet ingredients. Stir in chopped pecans.
5. Pour the batter into the prepared pan and smooth the top with a spatula.
6. Bake for 50-60 minutes, or until a toothpick comes out clean.
7. Let it cool for 10 minutes, then transfer to a wire rack.
8. For the glaze, mix powdered sugar, maple syrup, and milk until smooth.
9. Drizzle the glaze over the cooled loaf and sprinkle extra pecans on top.
