🍛 Butter Chicken Recipe

Ingredients:

For Marination:

250g chicken (boneless, medium pieces)
1/2 cup curd (yogurt)
1 tsp ginger-garlic paste
1/2 tsp turmeric
1 tsp red chili powder
1 tsp garam masala
Salt to taste
1 tbsp lemon juice

For Gravy:

2 tbsp butter
1 tbsp oil
2 tomatoes (pureed)
1 onion (finely chopped)
1 tsp ginger-garlic paste
1/2 tsp turmeric
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 cup fresh cream
1 tbsp kasuri methi (crushed)
Salt to taste
Fresh coriander for garnish

👩‍🍳 Method:

1. Marinate Chicken
Mix all marination ingredients with chicken.
Keep aside for at least 30 minutes (overnight is best).

2. Cook Chicken
Heat a pan, add a little butter or oil.
Cook marinated chicken until soft and slightly charred. Keep aside.

3. Prepare Gravy
Heat butter + oil in a pan.
Add chopped onion, sauté till golden.
Add ginger-garlic paste, cook till raw smell goes.
Add tomato puree, cook till oil separates.

4. Add Spices
Add turmeric, chili powder, coriander powder, salt.
Cook for 2–3 minutes.

5. Combine
Add cooked chicken into gravy.
Mix well and cook for 5–7 minutes.

6. Make it Creamy
Add fresh cream and crushed kasuri methi.
Mix and simmer for 2 minutes.

7. Finish
Garnish with butter and coriander leaves.

🌾 Ragi Soup (Finger Millet Soup)

🧾 Ingredients:

2 tbsp ragi flour
1 tsp oil or butter
1 tsp garlic (finely chopped)
1 tbsp onion (finely chopped)
2 tbsp mixed vegetables (carrot, beans, peas – finely chopped)
2 cups water or vegetable stock
Salt to taste
¼ tsp black pepper powder
½ tsp roasted cumin powder
1 tbsp coriander leaves (chopped)
1 tsp lemon juice

👩‍🍳 Method:

Make ragi slurry

Mix ragi flour with a little water (no lumps).

Sauté base

Heat oil/butter, add garlic and onions.
Sauté till fragrant.

Add veggies

Add chopped vegetables and cook for 2–3 minutes.

Add liquid

Pour water/stock and bring to boil.
Add ragi mix
Slowly add ragi slurry while stirring continuously.

Cook

Simmer on low flame for 5–7 minutes till it thickens.

Season

Add salt, pepper, cumin powder.
Finish

Turn off heat, add lemon juice and coriander.

🥔 Crispy Aloo Tikki

🧾 Ingredients:

3–4 boiled potatoes (mashed)
2 tbsp cornflour or rice flour (for crispiness)
1–2 green chilies (finely chopped)
1 tsp ginger (grated)
½ tsp red chili powder
½ tsp garam masala
½ tsp chaat masala
Salt to taste
2 tbsp coriander leaves (chopped)
Oil for shallow frying

👩‍🍳 Method:

Prepare mixture
In a bowl, mix mashed potatoes, cornflour, green chilies, ginger, spices, salt, and coriander.
Shape tikki
Take small portions and shape into round flat patties.
Cook
Heat oil on a tawa.
Cook tikkis on medium flame until golden and crispy on both sides.

🥗 Onion Salad (quick):

Sliced onions
Salt + red chili powder
Lemon juice
Chopped coriander
Mix well 👍

🌿 Green Chutney:

Coriander leaves – 1 cup
Mint leaves – ½ cup
Green chili – 1
Lemon juice – 1 tbsp
Salt + little water
Grind smooth.

🍽️ Serve with:
Green chutney
Onion salad
Lemon wedge 🍋

Mango Falooda Recipe

Ingredients:

2 Ripe mangoes (peeled & chopped or blended into pulp)
2 tbsp falooda sev (vermicelli)
1.5 cups chilled milk
2 tbsp sugar (optional, based on mango sweetness)
1 tbsp sabja seeds (basil seeds)
2 scoops vanilla ice cream
2 tbsp tutti frutti
A few strands of saffron
Mango jelly cubes (optional)
Chopped mango pieces (for layering and garnish)

Method:

1. Soak sabja seeds
Soak 1 tbsp sabja seeds in water for 10–15 minutes.
They will puff up and become gelatinous. Drain and keep aside.

2. Cook falooda sev
Boil 2 cups of water.
Add falooda sev and cook for 3–5 minutes until soft.
Drain and rinse in cold water. Set aside.

3. Prepare mango base
Blend 1½ mangoes with 2 tbsp sugar to make smooth pulp.
Cut the remaining ½ mango into small cubes.

4. Layer the falooda
Take a tall glass and layer in this order:

1. 1 tbsp soaked sabja seeds
2. 1 tbsp cooked falooda sev
3. 2–3 tbsp mango pulp
4. Few mango jelly cubes (optional)
5. Some chopped mangoes
6. Pour chilled milk till ¾th of the glass
7. Add 1 scoop vanilla ice cream
8. Garnish with tutti frutti, saffron strands, and more mango cubes. Serve immediately.

South Indian Upma recipe 👇

🧾 Ingredients:

1 cup rava (sooji/semolina)
2 tbsp oil or ghee
8–10 cashews (fried)
1 tsp mustard seeds
1 tsp urad dal
1–2 green chilies (chopped)
1 small onion (finely chopped)
8–10 curry leaves
2½ cups water
Salt to taste
2 tbsp fresh coriander (chopped)
1 tbsp lemon juice
Optional: carrots, peas

👩‍🍳 Method:

Roast rava
Dry roast rava on low flame until light aromatic. Keep aside.
Fry cashews
Heat oil/ghee, fry cashews till golden. Remove and keep aside.
Prepare tempering
In the same pan, add mustard seeds → let them splutter.
Add urad dal, curry leaves, green chilies, onions.
Sauté till onions turn soft.
Add veggies (optional)
Add carrots/peas and cook for 2–3 minutes.
Add water
Pour water + salt. Bring to boil.
Add rava
Slowly add roasted rava while stirring continuously (no lumps).
Cook
Cover and cook on low flame for 2–3 minutes.

Finish
Add lemon juice, coriander, and fried cashews. Mix gently.

🍽️ Serve with:
Coconut (white) chutney
Lemon wedge 🍋
Filter coffee ☕ on the side

Strawberry Ice Cream recipe 🍓🍨

🥄 Ingredients:

2 cups fresh strawberries (washed & chopped)
½ cup sugar
1 cup fresh cream (malai / whipping cream)
½ cup milk
1 tsp vanilla essence (optional)

🍨 Method:

Make strawberry puree
Blend chopped strawberries with sugar into a smooth puree.
Prepare the base
In a bowl, mix cream and milk. Whisk lightly until smooth.
Combine
Add strawberry puree and vanilla essence. Mix well.

Freeze

Pour into an airtight container and freeze for 6–8 hours.
Creamier texture tip
After 2–3 hours, take it out, blend or whisk again, then freeze. This reduces ice crystals.

✨ Tips:
Use chilled cream for better texture.
Add small strawberry chunks for extra bite.
You can drizzle strawberry syrup on top while serving.

🍪 Oreo Chocolate Shake

Ingredients:

6–8 Oreo biscuits
2 cups chilled milk
2 scoops vanilla or chocolate ice cream
2 tbsp chocolate syrup
1 tbsp sugar (optional)
Ice cubes (optional)
For Garnish:
Whipped cream
Crushed Oreo
Chocolate syrup drizzle

Method:

Blend:
Add milk, ice cream, Oreo biscuits, chocolate syrup, and sugar into a blender.
Blend until smooth and creamy.
Adjust Texture:
Add ice cubes if you want it thicker and colder.
Blend again briefly.
Prepare Glass:
Drizzle chocolate syrup inside the glass for a nice look.

Serve:

Pour the shake into the glass.
Top with whipped cream, crushed Oreos, and chocolate drizzle.

6–8 small pizza bases (or bread slices)
½ cup pizza sauce
1 cup grated mozzarella cheese
¼ cup chopped capsicum (bell pepper)
¼ cup chopped tomatoes (seeds removed)
¼ cup onion (optional)
Olives / corn (optional)
1 tsp oregano
½ tsp chili flakes
Salt to taste

🍕 Method:

Prepare base
Place mini pizza bases (or bread) on a tray.
Add sauce
Spread 1–2 tsp pizza sauce on each base.
Add toppings
Put capsicum, tomato, onion, olives, or any toppings you like.
Add cheese
Sprinkle a generous layer of mozzarella cheese.
Seasoning
Add oregano, chili flakes, and a pinch of salt.
Bake
Bake in a preheated oven at 180°C for 8–10 minutes
(or cook on a pan with lid until cheese melts).

Refreshing Rose Sharbat (Rose Sarbat) recipe 🌹🥤

Ingredients

2 tbsp rose syrup (Rooh Afza or any rose sharbat)
1 glass cold water (or chilled milk for richer taste)
1 tsp lemon juice (optional, for slight tang)
1 tsp soaked sabja (basil) seeds
Ice cubes
Few fresh rose petals (optional, for garnish)
Mint leaves (optional)

Method

Soak sabja seeds in water for 10 minutes until they swell.
In a glass, add rose syrup.
Pour in cold water or milk and mix well.
Add lemon juice (if using) and stir.
Add soaked sabja seeds and ice cubes.
Garnish with rose petals and mint leaves.

Tip

Use chilled milk + a scoop of vanilla ice cream to turn it into a rich rose milk dessert drink 😋
Adjust syrup quantity based on how sweet you like it.
