Kavuni Arisi Kozhukattai | Vinayakar Chaturthi Special Kozhukattai
Ingredients
For Dough
Kavuni Arisi Flour – 1 cup
Water – 1 cup (adjust as needed)
Salt – to taste
Ghee – 1 tsp
For Pooranam (stuffing)
Ghee – 1 tbsp
Grated Coconut – 1 cup
Cashews – ¼ cup
Jaggery/Nattu Sakkarai – ½ cup
Cardamom Powder – ¼ tsp
Dry Ginger Powder – ¼ tsp
Method
Kavuni Arisi Flour: Wash the rice, drain completely and dry roast until slightly crisp. Cool, grind and sieve.
Dough: Boil water with salt and ghee. In a separate bowl, add the flour and mix in the boiling water. Knead into a soft dough and let it cool.
Pooranam: Heat ghee, saute coconut and cashews. Add jaggery, cardamom and dry ginger powder. Mix well.
Kozhukattai: Knead the dough. Make one version on a banana leaf by flattening the dough, adding pooranam and folding it. For the other version, shape the modak by hand without a mould.
Steam for 15 minutes and cool for 5 minutes before serving.
Note: Kavuni arisi kozhukattai is very soft and slightly sticky, so banana leaves help prevent them from sticking together. If making modak, leave some gap between them while steaming.
