Hakka Noodles 🍜 is a popular Indo-Chinese dish, made with stir-fried noodles, vegetables & sauces.

Method -
Boil Noodles: Cook noodles using a wok until just tender, avoid overcooking and drain, tossing with a little oil to prevent sticking.

Saute Aromatics & Veggies: Stir-fry garlic, ginger, & vegetables of your choice in a hot wok.

Add Noodles & Sauces: Toss in the cooked noodles, soy sauce, chili sauce, vinegar, and other seasonings.

Stir-Fry: Cook quickly over high heat until everything is well combined and slightly smoky.

Serve: Garnish with fresh green onions and serve hot, often with more chili sauce on the side.

~ Rajasthani Thali - Aunthentic & Delicious combination of food 😋

This Thali includes
- Bati (made from wheat flour)
- Panchmel Dal (lentils)
- Gatte ki Sabji
- Rajasthani Kadhi
- Steamed Rice
- Chaaj (Buttermilk) or Curd
- last but not tue least, Churma

Any rajasthani thali is incomplete without Daal-Bati Churma. Most of the food is cooked in Ghee, with different spices. Dal tastes best when served warm with traditioanal indian breads such ad bati, missi roti or khoba rati.

Sri Lanka National Dish is Rice & Curry which is a combination of steamed rice & variety of curries. Its a popular meal in Sri Lanka & easily available in most of the restaurants. Mostly they serves the less-spicy version of this dish due to the tourists or foreigners. Each bowl contains small portions but can be refilled.

They use chillies, cardamom, cumin seeds, coriander & other spices to make the curry.

The thali contains the following :-
• A bowl of steamed rice or Kiribath
• A Vegetable Curry, mostly green beans, brinjal or pupkin
• Yellow Daal or Dhal
• Papadums, made from rice flour
• Sambals, Fresh spicy chutney made from onions, tomatoes & spices

Do not forget to try this meal whenever you are in Sri Lanka 🇱🇰

Janamashtami Special ~ Mawa (Khoya) Peda

Mawa Peda is a delightful milk based sweet fudge, orginiated from Mathura region & traditionally made up of Khoya (Milk Solids), Powdered Sugar, Dryfruits & Cardamom Powder.

They're also offered to deities as Prashad or Bhog during religious occassions.

Here's the recipe ~
• Grate homemade or store bought Khoya.
• Add this to a deep pan or kadai & stir it non-stop so that the mixture does not get brown. You can add 2tbspn of ghee while stirring.
• Cook until the khoya starts to pull away from the sides of pan.
• Transfer the khoya into a pan, let it cool down.
• Ads Powdered sugar, nuts, cardomom powder & mix well.
• Now take the small portions from the lukewarm peda mixture & roll them into the desired shape.
• Garnish in with some rose petals or any garnishing of your choice.

Lauki Kofta Curry ~ Its an easy & simple recipe made with lauki (bottleguard) koftas which are dunked in onion tomato gravy. Koftas are traditionally deep fried, but you can airfry them. It can be either served with rice or chapati.

To make Koftas ~
• Peel & Grate a lauki, rinse it well & squeeze as much water as you can from it. Transfer it to another bowl.
• Add Besan (Gramflour) & Rice flour (optional) along with chopped green chillies, grated ginger & spices of your choice.
• Mix it well, add little water as needed & combine them together.
• Take small portions from the mixture, give it a round or any shape & fry them until golden brown. The koftas are done, keep them aside.

Now, Lets make curry -
• Take a pan, add 2tbsp oil. Once it's hot, add ginger garlic paste, then add onions & cook it for 2-3minutes. Then, add tomatoes, green chillies & salt. Cook them well for 4-5 minutes.
• Remove the pan from stove and let it cool down. Then, transfer everthing to a blender to make a fine paste.
• Now, Take a pan. Add oil, add cumin seeds & let them sizzle.
• Then, Add the paste & give it a nice stir, add all the spices to it & cook it well until it starts leaving oil from the sides.
• Add, little water and give it a boil.
• Now add the Koftas in the gravy & cook it for 2-3minutes.
• Now, the koftas are ready, garnish it with kasuri methi, coariander leaves 🍃 & Serve hot ☺️

Navratri Special ~ Sabudana Khichdi is a popular indian dish made with Tapioca or Sago pearls, roasted peanuts, potato & whole spices. It is rich in carbodhyrates and a popular fasting food.

Sabudana Khichdi is commonly eaten during navratri & other hindu fasting days.

Method-
• Heat ghee in a pan & add cumin seeds. Wehn they begin to splutter, add chopped green chillies and ginger (optional). Saute for 1-2 Minutes.
• Add boiled & sliced potatoes, saute for 2-3minutes. Add salt.
• Keep the flame low, add soaked & drained sabudana, add roasted peanuts & sprinkle rock salt & black pepper.
• Mix everything & saure well for 2-3minutes. By then the sago pearls turns transparent.
• Remove the pan from.the stove. Add coariander leaves 🍃 & serve it warm with a bowl of yoghurt.

Note~
• Do not overcook sabudana else it may turn sticky.
• Do not oversoak them.
• Make sure to drain all the excess water from the soaked sabudana.

Dahi Bhalla | Dahi Vada is a popular Noth Indian chaat dish. It's a perfect balance of sweet, sour, salty, spicy & tangines. Bhalla or Vada is a kind of fritter made of with soaked Urad Daal, dunked in creamy yoghurt and topped with sweet & spicy chutney and spices.

It is served as a snack, chaat, appetizer or as a side dish with the main course.

Method ~
• To make Dahi Vada batter
Soak the Urad Daal overnight.
Drain the soaking water.
Add ginger, salt, green chilli, pepper and soaked lemtils in a blender.
Grind the ingedients to make a smooth batter. It should be thick & of droping consistency.
Make sure to whip the batter proberly to make soft & pluffy vada's.

• To fry the Vada
Heat oil in a wok.
Scoop out the batter with your hand or with a spoon & drop them into the oil to fry.
Take out the vada's on a tissue to remove excess oil.
Now, soak the vada's in lukewarm water as soon as they are fried for atleast 15-20 minutes.

• Assembling Dahi Vada or Dahi Bhalla
Take the each vada & gently press them with ypur palms to remove excess water.
Whisk the yoghurt
Place the vada in a bowl, pour the yoghurt over them, add chutneys & sprinkle the spices.

For Garnishing, you can add coariander leaves 🍃 , pomegranate seeds.
