Falahari Dahi Bhalla
Falahari Navratri Special Dahi Bhalla that is perfect for fasting:
Ingredients:
For Bhalla:
• 1 cup samak rice (also known as barnyard millet)
• 2 tablespoons rajgira flour (amaranth flour) or singhara flour (water chestnut flour)
• 1 boiled potato (optional, for binding)
• Rock salt (sendha namak) to taste
• 1 teaspoon cumin seeds (jeera)
• 1 teaspoon black pepper powder
• 1-2 green chilies, finely chopped (optional)
• Oil/ghee for frying
For Yogurt Mixture:
• 2 cups fresh curd (yogurt)
• 1 teaspoon sugar (optional, for taste)
• Rock salt (sendha namak) to taste
• 1 teaspoon roasted cumin powder
• 1 teaspoon black pepper powder
• 1 tablespoon fresh coriander leaves, finely chopped
For Garnishing:
• Sweet tamarind chutney (made with dates and rock salt)
• Green coriander chutney (without regular salt)
• Pomegranate seeds
• Roasted cumin powder
• Red chili powder (optional, for a bit of spice)
Instructions:
1. Prepare the Bhallas:
• Wash and soak the samak rice for 2-3 hours. Drain the water and grind it into a smooth paste.
• In a mixing bowl, combine the samak rice paste, rajgira flour, boiled potato (if using), cumin seeds, black pepper powder, chopped green chilies, and rock salt. Mix well to form a thick batter. Adjust consistency if needed by adding a little water.
• Heat oil or ghee in a deep frying pan. Wet your hands, take small portions of the batter, shape them into round balls, and carefully slide them into the hot oil.
• Fry until they are golden brown and crispy. Remove and place them on a paper towel to drain excess oil.
2. Soak the Bhallas:
• In a bowl of warm water, add a pinch of rock salt. Soak the fried bhallas in this water for 15-20 minutes until they become soft and puffed up. Gently press each bhalla between your palms to remove excess water.
3. Prepare the Yogurt:
• Whisk the curd/yogurt until smooth. Add sugar (if using), rock salt, roasted cumin powder, and black pepper powder. Mix well.
4. Assemble:
• Place the soaked and squeezed bhallas in a serving dish. Pour the prepared yogurt mixture over them, ensuring all the bhallas are well covered.
• Drizzle with sweet tamarind chutney and green coriander chutney.
• Garnish with pomegranate seeds, roasted cumin powder, and red chili powder (if desired).
Enjoy your Falahari Dahi Bhalla during Navratri!
